3/4 cup peach preserves
1/2 cup reduced-sodium soy sauce
3 tablespoons minced fresh gingerroot
3 tablespoons water
3 garlic cloves, minced
Dash hot pepper sauce, optional
4 medium sweet red peppers
1 medium eggplant
3 small zucchini
2 small yellow summer squash
12 hot Italian pork or turkey sausage links (4 ounces each)

Steps:

  • Place the first 5 ingredients in a blender; if desired, add pepper sauce. Cover and process until blended., Cut peppers lengthwise in half; remove seeds. Cut eggplant lengthwise into 1/2-in.-thick slices. Cut zucchini and yellow squash lengthwise into quarters. Place all vegetables in a large bowl; drizzle with 1/2 cup of the sauce and toss to coat., Place vegetables on a greased grill rack. Grill, covered, over medium heat 8-10 minutes or until tender and lightly charred, turning once. Cool slightly. Reduce grill temperature to medium-low heat., Cut vegetables into bite-sized pieces. ½ cup pinto beans
½ cup lentils
1 serving cooking spray
8 ounces fresh mushrooms, finely chopped
1 onion, finely chopped
1 red bell pepper, finely chopped
1 egg
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon dried basil
1 teaspoon dried marjoram
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon cayenne pepper
½ cup rolled oats
¼ cup shredded Cheddar cheese
¼ cup sunflower kernels, chopped

Steps:

  • Put pinto beans and lentils into two separate pots of water; bring both to a boil, turn off heat, cover, and let stand 1 hour.
  • Drain and rinse beans.
  • Prepare a large skillet with cooking spray and heat over medium-low heat; cook and stir mushrooms, onion, and bell pepper in hot skillet until onion is soft and mushrooms are darkened, 25 to 30 minutes. Spread mushroom mixture onto a platter to cool.

6 - raw sausages, (not precooked) hot, spicy or your choice
2 large sweet onions, cut in eighths
3 medium squash, yellow, cut in 1
3 medium zucchini, cut in 1
1 package(s) baby carrots
4 medium corn on the cob (broken in 3 pieces)
3 large fresh portabello mushrooms quartered
2 - sweet peppers, red, green, orange, or yellow
4 medium potatoes or sweet potatoes, quartered
2 tablespoon(s) italian or greek seasoning or sprigs of fresh herbs of your choice
- salt & pepper to taste

  • Prepare all ingredients, make a heavy duty foil bag, put all ingredients in the 'bag' and shake it up. (Ready made grill bags are wonderful, if you can find them.) Put directly in an open fire and turn frequently, or put on the grill. The veggies listed can be substituted with your family's favorites & quantities are your own preference. The sausage seasons everything in the cooking bag and raw sausages, not the precooked ones, do the best job of adding juicyness & flavor. 1 medium summer squash, cut into 1-inch slices

6 -10 okra pods, steam cut off, cut into 1 inch lengths (optional)
1/2 cup mushroom, quartered (optional)
4 -6 garlic cloves, peeled
2 tablespoons olive oil
