3/4 lb bulk Italian sausage (hot or mild)
1 1/2 cups spaghetti sauce (from a jar)
1/2 cup sliced pitted ripe olives (black or green)
1 red onion, sliced in half rings
1/2 sweet red pepper, sliced in strips
4 French rolls
4 slices mozzarella cheese (approx 6 ounces)

Steps:

  • Preheat the oven to 375°F.
  • In a skillet brown sausage.
  • Drain off the fat, stir in the sauce and olives, heat through.
  • Split rolls lengthwise without cutting through opposite side.
  • Hollow out buns slightly, halve cheese slices lengthwise.
  • Place a piece of cheese on bottom half of each roll.
  • Divide meat mixture evenly among the 4 rolls, top with onion and sweet peppers.
  • Place another cheese slice on top and close the rolls.
  • Wrap each sandwich in foil and seal, place on a baking sheet and bake the wrapped sandwiches in the oven for approx 15 minutes.

1 tablespoon vegetable oil
4 links Polish kielbasa sausage, patted dry with a paper towel (about 1 1/2 pounds)
1 yellow onion, thinly sliced
Kosher salt and freshly ground black pepper
4 fresh poppy seed hot dog buns
Yellow mustard
6 to 10 pickled sport peppers

Steps:

  • Preheat the oven to 175 degrees F.
  • Heat the oil over medium heat in a heavy-bottomed skillet. Add the sausages and cook on each side, undisturbed, until golden brown, about 5 minutes a side. Set on a baking dish in the oven to keep warm.
  • To the same skillet, add the onions and stir to combine with the oil. Season the onions with salt and pepper and cook over medium-low heat, undisturbed, until the bottom of the onions begin to caramelize, about 10 minutes. Stir only once and cook for another 25 minutes, undisturbed. Once the onions are golden and soft, set aside.
  • For the sandwich build: Place a sausage on a bun, slather in good yellow mustard, top with an ample amount of caramelized onions and 2 or 3 sport peppers. ¼ cup prepared horseradish

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart rectangular baking dish with cooking spray. In a medium bowl, whisk together the eggs, milk, salt, and pepper. Pour into prepared dish. Bake for 20 to 25 minutes or until set.
  • Meanwhile, cut smoked sausage into 6 pieces. Halve each piece lengthwise, cutting to but not through the other side to keep the pieces together. Heat a 12-inch skillet over medium heat. 4 mild Italian sausage or 4 hot Italian sausages
2 medium onions (cut in half & sliced)
1 green bell pepper (cored, seeded & sliced)
1 red bell pepper (cored, seeded & sliced)
6 tablespoons extra virgin olive oil
1/2 tablespoon salt
1 tablespoon black pepper
1/8 teaspoon dried oregano
1/8 cup white wine or 1/8 cup red wine
1/4 cup shredded parmesan cheese
1/4 cup shredded mozzarella cheese
1/4 cup shredded provolone cheese
4 hoagie rolls (submarine)
1 cup marinara sauce (see my recipe 84217)

Steps:

  • Poach raw sausages in 1/2 cup water in a covered skillet, simmering until almost done.
  • This takes about 8 to 10 minutes.
  • Sautè onions and peppers with olive oil, salt, pepper and oregano 4 minutes on medium-high heat.
  • Add the wine, cover and cook 4 minutes more.
  • Uncover and cook until moisture is absorbed.
  • On either a grill or in a skillet with a little extra-virgin olive oil, cook the poached sausages over medium-high heat 7 to 10 minutes, turning often to ensure even browning.
  • In a large baking dish or pan, place the opened rolls.
  • Fill the rolls with 1 sausage in each roll and evenly distribute the onions and peppers.
  • Mix the 3 shredded cheeses and evenly sprinkle that on top.
  • Place in oven, uncovered, on 400°F or until the cheese is melted.
  • Remove from oven, top with some Marinara sauce, close the sandwiches and serve.

1 Tbsp. unsalted butter
2 large eggs
Pinch of kosher salt
Pinch of crushed red pepper flakes (optional)

Harissa paste (for muffins)
3 oz. feta cheese, thinly sliced
1/3 cup sliced drained Peppadew peppers (about 3 oz.)
1/2 cup cilantro leaves with tender stems

Steps:

  • Using damp hands, form sausage into two 1/4"-thick patties.
  • Heat a large cast-iron skillet over medium-high until hot. Cook patties until golden brown on bottom side, about 2 minutes. Turn and continue to cook until other side is browned and cooked through, 2-3 minutes more. Transfer to a plate. Wipe out skillet.
  • Heat butter over medium in same skillet until melted. Cook eggs, undisturbed, until whites are set, edges are golden, and yolks are still runny, 4-5 minutes. Season with salt and red pepper flakes (if using). Remove pan from heat.
  • Spread harissa on 2 muffin halves. Top with feta, patties, eggs, peppers, and cilantro. Spread mayonnaise on remaining muffin halves, then close up sandwiches.

16 ounces sauerkraut, drained
4 submarine rolls
mustard (yellow or brown, your choice)
horseradish (optional)

Steps:

  • Slice the sausage into 1/4" rounds, on the diagonal (so as to get more surface space).
  • Evenly lay out the sausage slices over bottom half of sub rolls.
  • Top with desired amount of sauerkraut, if desired. In Michigan - they desire. lol.
  • Squirt some mustard, your choice of flavor - over the kraut.
  • If you're into horseradish, you want to schmear the top half of the bun with that.
  • Cover the sandwich with the top bun; wrap in foil, and bake at 350 for about 15 minutes, until heated thru and bun is toasted.
  • Sometimes people would ask for cheese to be added, so if you see yourself in that crowd, add it after the kraut.

1/2 green bell pepper, sliced julienne
1 onion, sliced julienne
vegetable oil, for frying
4 potatoes, peeled and sliced into 1/4-inch chips
1 teaspoon kosher salt, to taste
4 Italian sausages (links)
1 round loaf Italian bread (Recommended Buddha's Pizza Pie Crust)
4 tablespoons prepared mustard (yellow, spicy brown, or dejon)

Steps:

  • Preheat oven to 350°F Bake sausage links for 30 minutes, turning once. Let cool, slice in half lengthwise and set aside. Reduce oven to 200°F.
  • Meanwhile, in a medium saucepan over medium heat, add peppers and onions with about 2 tbsp oil. Simmer covered to soften. Keep warm. Drain in colander just before assembly.
  • Meanwhile, fry potatoes in hot oil until crisp on the outside and soft on the inside. Remove from oil, drain on paper towels, and immediately sprinkle with salt (to liking). Place on baking sheet, Keep warm in 200°F oven.
  • Drop Sausage links into the fryer and fry 1 minute to cook thru. Set aside to drain on paper towels.
  • ASSEMBLY: Cut round bread loaf in half. Slice each one open to form a pocket. Smear mustard (amount depending on your liking) on the inside of the bread. NOTE: Mustard is unbelievably wonderful for this sandwich, a must try!
  • Place the link halves equally amongst the two sandwiches skin side up and tuck them down into the bread and up the edges.
  • Using a fork, place some of the peppers and onions onto the sausages. Top with a very generous portion of fried potatoes.
  • Wrap in parchment paper or foil as a to-go item. Place on a dinner place, use 2 hands to lift the sandwich, and devour!

1 cup grated Monterey jack or white Cheddar cheese
1 pound breakfast sausage, casings removed
1/2 large onion or 1 small onion, finely chopped
1 jalapeno chile, finely chopped
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1 tablespoon finely chopped fresh sage leaves
Salt and freshly ground black pepper

Steps:

  • Preheat the broiler.
  • Whisk together the eggs, water, green onions, and salt and pepper in a large bowl. Heat the butter in a large nonstick saute pan over medium heat. Add the egg mixture and stir until soft curds form.
  • Place the toasted English muffins on a baking sheet and divide the sausage patties among the halves. Scatter about 1/4 cup of the cheese over top and place under the broiler for a minute or so, just until cheese is melted. Divide eggs over top of melted cheese, then ladle some of the gravy over, and garnish with green onion tops. Serve immediately, 2 halves per person.
  • Form sausage into 4 patties and cook in a large skillet over medium-high heat until golden brown. Remove to a plate with a slotted spoon. Add the onion and jalapeno to the pan and cook until soft. Stir in the flour and cook for 1 1/2 to 2 minutes. Slowly whisk in the milk and bring to a boil, whisking constantly, until thickened. 2 zucchini, trimmed, diced

1 large tomato, seeded, diced
3 garlic cloves, chopped
1/4 cup chopped fresh basil
10 large eggs
1/3 cup grated Parmesan cheese

Steps:

  • Cut bread horizontally in half. Cut out soft insides, leaving 1/2-inch-thick shells. Brush inside of bread shells with 1 tablespoon olive oil.
  • Crumble sausage into large non-stick broilerproof skillet. Sauté over medium heat until brown, about 5 minutes. Transfer sausage to bowl. Add onion, zucchini, bell pepper, tomato and garlic to skillet and sauté until vegetables are tender and liquid evaporates, about 9 minutes. Mix in basil. Cool briefly.

4 links Italian sausages, uncooked (sweet or hot)
1 sweet onion, sliced
1 bell pepper, sliced (I used 4 colors already sliced from Trader Joe's)
4 ounces reduced-fat swiss cheese, sliced (4 slices)
cooking spray
salt and pepper, if desired
1 French baguette, uncut (cut into four 8-inch portions or four 8-inch oblong crusty bread rolls)
1 -2 cup baby arugula
1/4 cup Best Foods Mayonnaise
1 -2 teaspoon hot chili sauce, sriracha (optional if you like it spicy)
1/4 cup fresh basil, chopped
1 fresh garlic clove, minced

Steps:

  • Preheat oven to 350°F Lightly spray a large baking sheet.
  • Lay onion slices and bell pepper slices on the baking sheet and spray with oil. Sprinkle with salt and pepper if desired.
  • Prick sausages with a fork and place on baking sheet. Bake for 15 minutes. Stir and turn veggies and sausages at about 10 minutes so they don't burn on the bottom.
  • Puree sauce ingredients together. I used an immersion blender in a pyrex measuring cup. A mini food processor would work too.
  • Cut a wedge (making a V large enough for the sausage and veggies to fit in) out of each bread roll and spread the interior with basil sauce. You can spread the cut out wedge with sauce too or you can discard it.
  • Lay Swiss cheese slices over the sauce.
  • Place prepared bread rolls onto a second baking tray and bake for 5 minutes or until cheese is melted and bread is toasted to your liking.
  • Remove from oven and place sausage into prepared bread rolls, cover with onions and peppers and top with arugula.
  • If you saved the cut out bread wedges you can eat them on the side.

1 package pre-cooked sausage patties
1 (8-ounce) can crescent shaped rolls
2 tablespoons butter
2 tablespoons mayonnaise
1 dash hot sauce
Lemon juice
4 slices American cheese

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the pre-cooked sausage patties in the oven for 15 to 18 minutes.
  • While sausage patties are heating, prepare rolls. Unroll the crescent dough from the can. Notice that there are four rectangular pieces. Separate the rectangles from each other. Place one rectangle with a long side nearest you. Separate the triangles and pinch together the two shorter sides making one large triangle. Loosely roll up the triangle starting from the longest side. Bring the ends around and overlap to form a circle. Press ends together and place on a baking sheet. Repeat with remaining three pieces. Brush rolls with butter and bake for 11 to 13 minutes.
  • While rolls are baking, mix together the mayonnaise, hot sauce, and lemon juice, to taste.
  • Slice baked rolls horizontally. Split roll and place sausage patty on bottom half. Add a dollop of mayonnaise sauce, a slice of cheese, and replace the top of the roll. Heat the sandwich in the microwave for 20 to 30 seconds, or until the cheese starts to melt.

SAUSAGE AND BROCCOLI RABE SANDWICH

3 tablespoons extra-virgin olive oil
3/4 pound sweet Italian sausage without fennel seeds, removed from casing (about 3 sausages)
1 bunch broccoli rabe, trimmed, tough stems peeled
1/4 teaspoon peperoncino flakes
1/4 teaspoon kosher salt
Two 6-inch lengths Italian bread, split and lightly toasted

Steps:

  • Heat olive oil in a large skillet over medium heat. When the oil is hot, add the sausage, and cook, breaking into small crumbles with the back of a wooden spoon, until sausage is browned, about 5 minutes.
  • Add the broccoli rabe, peperoncino, and salt, and stir. Cover, and cook, stirring occasionally, until the broccoli rabe is tender, about 6 to 8 minutes. Add a few tablespoons of water to the skillet if necessary.
  • Place Italian bread on plates, and top with the sausage and broccoli rabe. Serve hot.

1 bunch mizuna, roots removed, cut into 2-inch pieces
¼ onion, sliced
4 slices bread
2 slices mozzarella cheese
2 Vienna sausages, thinly sliced
1 tablespoon butter, or as needed

Steps:

  • Layer ham, mizuna, and onion over 2 slices of bread. Place mozzarella cheese on top. Spread sliced sausage evenly over cheese. Cover with the other 2 slices of bread.
  • Preheat a sandwich maker according to manufacturer's instructions. Brush plates with melted butter.
  • Cook sandwiches in the preheated sandwich maker until crispy, about 5 minutes. Cut each sandwich in half before serving.

1 package (1/4 ounce) active dry yeast
1-1/3 cups warm water (110° to 115°), divided
1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour
1 pound bulk Italian sausage
1 medium sweet red pepper, diced
1 medium green pepper, diced
1 large onion, diced
4 cups shredded part-skim mozzarella cheese
1 large egg
1 tablespoon water
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh parsley
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add the salt, remaining water and 2 cups flour. Beat until smooth. Add enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, about 6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 50 minutes. , Preheat oven to 400°. In a large skillet, cook sausage over medium heat until no longer pink; remove with a slotted spoon and set aside. In drippings, saute peppers and onion until tender; drain. , Press half of the dough onto the bottom and 1/2 in. up the sides of a greased 15x10x1-in. baking pan. Spread sausage evenly over crust. Top with peppers and onion. Sprinkle with mozzarella cheese. Roll out remaining dough to fit pan; place over cheese and seal edges. , In a small bowl, beat egg and water. Stir in remaining ingredients. Brush over dough. Cut slits in top. Bake 20-25 minutes or until golden brown. Cut into squares.
