1/4 cup vegetable oil
5 flour tortillas
1 cup crumbled, cooked pork sausage
1 cup triple cheddar shredded cheese

1.5 lb. Yukon Gold Potatoes ((such as Private Selection Petite Gold Potatoes))
1/4 Large Red Onion ((sliced))
2 teaspoons Salt
1 teaspoon Pepper
1 teaspoon Garlic Powder
4 Tablespoons Butter
Italian Parsley ((chopped))

Steps:

  • Preheat oven to 400 degrees. Layout 4 sheets of aluminum foil.
  • Slice sausage lengthwise. Cut potatoes into bite-size pieces. If using petite yukon gold potatoes, halve or quarter potatoes. Slice onion. Sprinkle potatoes with salt, pepper, and garlic powder.

2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced

3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning

6 eggs

1/3 cup buttermilk
1 1/2 cups sharp Cheddar cheese (6 oz)
3 or 4 Old El Paso™ flour tortillas for burritos (8 inch)
2 cups cooked hash brown potatoes
1/2 cup Old El Paso™ enchilada sauce, if desired

Steps:

  • Heat 10-inch skillet with high sides over medium-high heat; cook bacon in skillet until crispy. Remove to paper towel-lined plate.
  • Drain drippings from skillet; add sausage. Cook sausage until brown; remove from skillet to plate with bacon.
