With the variety of gourmet smoked sausages on the market these days, I wanted a recipe that was hearty, but still allowed the wonderful flavor of the sausage to shine through. With plenty of input from my father and my husband, this recipe was born.

SAUSAGE POTATO HASH

I did a pantry, freeze, fridge raid and this is what I came up with for supper. A delicious way to use breakfast sausage.

Time 45m

Number Of Ingredients 6

2 lb sausage
6 red potatoes
1-2 green bell pepper
1 small sweet onion
1 tsp ea. of mrs. dash original blend, granulated garlic
1/2 tsp ea. of black pepper and granulated onion

Steps:

  • 1. Wash potatoes and poke a hole in them with fork or knife. Place in microwave for 6 min.
  • 2. Break sausage up into skillet. Use your favorite, I used half fresh pork sausage and half fresh smoked jalapeno pork sausage. Add diced bell pepper and onion. Cook over med high heat. Break sausage apart into bite size pieces as it cooks.
  • 3. Cut microwaved potatoes in half and allow to cool until cool enough to handle. Then dice them into small bite size cubes. Add to sausage.
  • 4. Continue to cook and stir until sausage is done. You can cover with a lid or cook uncovered. Be sure to stir fairly often to ensure even cooking.

Tips:

  • Use a variety of potatoes. Different types of potatoes will give your hash different textures and flavors. For example, Yukon Gold potatoes are creamy and smooth, while red potatoes are waxy and firm. A good all-around choice is a combination of Yukon Gold and red potatoes.
  • Don't overcrowd the pan. When cooking the potatoes, make sure to give them plenty of space so that they can brown evenly. If you overcrowd the pan, the potatoes will steam instead of fry, and they will be mushy.
  • Cook the potatoes until they are golden brown. This will give them a crispy exterior and a fluffy interior. If you undercook the potatoes, they will be hard and unpleasant to eat.
  • Add the sausage and vegetables at the end of cooking. This will prevent them from overcooking. If you add them too early, they will become dry and tough.
  • Season the hash to taste. Use your favorite herbs and spices to give the hash a unique flavor. Some good options include salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.

Conclusion:

Sausage potato hash is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be tailored to your own tastes. The next time you are looking for a hearty and satisfying meal, give sausage potato hash a try.
