CHICKEN, SAUSAGE, PEPPERS, AND POTATOES
You'll need a large, heavy-duty roasting pan (or a couple of smaller ones) and a very hot oven for this delicious dish. The long oven time makes everything beautifully caramelized and the chicken fork tender.

Steps:
- Preheat oven to 450 degrees F (230 degrees C).
- Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
- When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
- Cut two slashes down to the bone on the skin side of each chicken thigh.
- Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
- Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
- Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
- Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

ITALIAN SAUSAGE WITH POTATOES, ONIONS, AND PEPPERS
I got this recipe from my mother inlaw, it is cheap and easy to put together. I love to throw this together on a cold, snowy Sunday morning - then I can just throw it in the oven later and go about my business while dinner cooks. Add a salad or crusty itallian bread for a side and you are all set. I sometimes use turkey sausage for a lower fat dish.

ONE-SKILLET SAUSAGE, PEPPERS, POTATOES, AND ONIONS
Number Of Ingredients 6
Steps:
- Set a 10-inch cast-iron skillet over medium-high heat. After it gets good and hot, add the olive oil, then the sausages. Brown all over-about 2 minutes per side-then remove to a waiting plate. We're not trying to cook them through, just sear 'em!
- Add another tablespoon olive oil to the skillet, followed by the potatoes, cut side facing down. Season with a big pinch of salt. Cook these for 5 minutes until browned, then flip and cook another 5 minutes. Transfer these to the plate with the sausages.
- Add the remaining tablespoon olive oil, then the peppers and onion. Season with a big pinch of salt. Sauté, stirring occasionally, until tender-about 10 minutes. Add the sausages and potatoes back to the skillet. Pour 1/3 cup water evenly over the top and cover the pan with a lid.
- Cook for 10 to 15 minutes until the sausage is cooked through and the potatoes are tender, lifting the lid for the last few minutes. Taste and adjust the salt accordingly.
Tips:
- Choose the right sausage: For the best flavor, use a high-quality sausage that is well-seasoned. A spicy or Italian sausage will add a nice kick, while a mild or breakfast sausage will be more subtle.
- Cook the sausage thoroughly: Sausage should be cooked to an internal temperature of 160 degrees Fahrenheit to ensure that it is safe to eat. You can cook it in a skillet over medium heat, or bake it in the oven at 350 degrees Fahrenheit for 20-25 minutes.
- Use a variety of peppers: For a more flavorful dish, use a variety of peppers, such as bell peppers, poblano peppers, and jalapeno peppers. You can also add some chopped onion or garlic for extra flavor.
- Don't overcrowd the pan: When cooking the sausage and peppers, be sure not to overcrowd the pan. This will prevent the food from cooking evenly and will make it more likely to stick to the pan.
- Season to taste: Once the dish is cooked, season it to taste with salt, pepper, and any other desired seasonings.
Conclusion:
Sausage, peppers, and potatoes is a classic dish that is easy to make and always a crowd-pleaser. It is a hearty and flavorful meal that is perfect for a weeknight dinner or a weekend brunch. With a few simple tips, you can make the best sausage, peppers, and potatoes dish that your family and friends will love.
