SAUSAGE AND PEPPER PENNE

This recipe is the best when made using farmer's sausage, but any sausage links will do. Add the red pepper flakes at the end for a little kick, or leave them out if spice isn't for you.

PENNE WITH SAUSAGE, TOMATO, RED PEPPER IN CREAM SAUCE

Penne With Sausage, Tomato, Red Pepper in Cream Sauce image

This is something I came up with when I didn't allow myself enough time to prepare dinner. The meat and veggies were supposed to be a filling for a stromboli, then I ended up using it for this pasta dish instead. It turned out to be a delicious dinner treat! You can change to ground beef, other peppers, pasta or a different cheese.

SAUSAGE AND ROASTED PEPPER PENNE

SAUSAGE AND ROASTED PEPPER PENNE image

Categories     Pasta     Pepper     Pork     Tomato     Dinner

Yield 6 people

Number Of Ingredients 10

1 large red bell pepper
1 lb (approx) sweet Italian sausage links, casings removed and sliced into coins
1-2 tablespoon(s) olive oil
4 cloves garlic, minced
2 tsp dried rosemary, crushed
6 tbsp of red wine
1 jar (26 oz.) of your favorite arrabbiata sauce
12 oz penne pasta
Shredded Parmesan (optional)
Chopped parsley (optional)

Steps:

  • 1.Slice the bell pepper into quarters, removing the stem and the seeds. Arrange quarters, "skin" side up, on a foil lined baking sheet. Broil in the oven on the top rack until the skin is blackened and blistered. Remove peppers from the baking sheet and place them immediately into a pan and cover with the lid for about 10-15 minutes. The peppers will "sweat", and the blistered skin will peel right off. After peeling and discarding the skin, chop the pepper coarsely and set aside. 2.In a large skillet, sauté the sliced sausage over medium heat until browned. Remove cooked sausage and set aside. 3.Add 1 tbsp olive oil to the drippings in the pan (use more oil if your pan is nonstick). Add the chopped pepper, dried rosemary, and the minced garlic. Sauté until the garlic just begins to turn golden. 4.Carefully pour in the red wine, and boil for a few minutes, until the liquid is reduced by about half. 5.Return the sausage to the skillet, and stir in the arrabbiata sauce. Simmer on low heat and stir occasionally while the pasta cooks. 6.Pour the meat sauce on top of cooked, drained pasta and top with cheese and parsley, if desired.

Tips:

  • Use high-quality sausage: The sausage is the star of this dish, so make sure to use a good-quality variety. Look for a sausage that is made with fresh, flavorful meat and has a nice balance of spices.
  • Cook the sausage properly: To get the best flavor and texture from the sausage, cook it over medium heat until it is browned on all sides. Avoid overcooking the sausage, as this will make it tough and dry.
  • Use a variety of peppers: Different types of peppers can add different flavors and colors to this dish. For a classic combination, use green bell peppers, red bell peppers, and yellow bell peppers. You can also add some heat by using a spicy pepper, such as a jalapeño or habanero pepper.
  • Don't be afraid to experiment with different pasta shapes: Penne is a classic choice for this dish, but you can also use other short pasta shapes, such as rotini, macaroni, or shells.
  • Add some fresh herbs: Fresh herbs, such as basil, oregano, or thyme, can add a nice pop of flavor to this dish. Stir them in at the end of cooking, just before serving.

Conclusion:

Sausage and pepper penne is a quick and easy dish that is perfect for a weeknight meal. It is also a versatile dish that can be easily customized to your own taste. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that the whole family will enjoy.
