- Preheat the oven to 425˚. Spread the peppers and onions on a baking sheet. Drizzle with the olive oil, sprinkle with the sage, salt and some pepper and toss, breaking up the onions a bit as you do.
- Put the sausages in and around the vegetables on the baking sheet.
- Bake until the sausages are cooked through and the vegetables are tender, 30 to 35 minutes.
- Slice the sausages and serve on rolls with the roasted vegetables.
ITALIAN SAUSAGE WITH PEPPERS & ONIONS

- Add oil to a large skillet over high heat.
- Brown the sausages well on all sides, I like to get a good amount of color on them. Color=flavor!
- Remove the sausages to a platter and set aside.
- Add the bell peppers and onions to the same skillet and cook for about 5 minutes, getting them a little bit brown as well.
- Reduce the heat to medium and add the garlic to the veggie mixture for the last minute.
- Next add the sausages back to the pan and dump in the tomato sauce and diced tomatoes with juice, the salt, Italian seasoning, onion powder and brown sugar.
- Bring to a boil then reduce to low and simmer covered for an hour or until sausages are cooked through.
- When you are ready to serve, toast your hoagie buns on both sides, then add the cheese to the inside of the buns and place back in the oven to broil until the cheese is melted.
- Add the Italian Sausage & peppers & onions to each hoagie and sprinkle with lots of Parmesan cheese. Serve with some of the tomato sauce on the side for dipping.
- My kiddos like their sausages cut up in bite size pieces before I put it on their hoagies, but that is optional.

- 1. Heat oil in large pan on medium low heat. Add onions and cook uncovered 5 minutes. You want the onions to soften and not brown too quickly. Add peppers, garlic, salt, pepper and red pepper flakes. Cook about 10 minutes.
- 2. Remove onion/pepper mixture from pan and keep warm. To same pan add sausages and raise heat to medium. Cook sausages on all sides until brown. Add water and marinara sauce and cover pan. Bring to a simmer, lower heat and cook for 10 minutes. Uncover the pan, cook a few minutes more to let most of the liquid evaporate.
- 3. Remove sausages from pan and either leave whole or slice. I like to slice mine into 1/4 inch pieces. Mix sausages with pepper and onion mixture and serve on toasted Italian bread or sub rolls. I love mine topped with mustard.

- For the spread: In a small bowl, whisk together the mayonnaise, Calabrian chili paste, lemon zest and salt. Set aside.

- Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
