I've made it with an incredible varity of ingredients. You can't make many mistakes, it comes out good in almost any circumstances. Steps:
- Preheat oven to 350 F.
- Cook and drain the noodles.
- Meanwhile, Brown the meat, (not any that is precooked) drain.
- Drain and wipe the pan.
- Add oil and heat.
- Saute the Bell Pepper and Onion 'til the onion is translucent.
- Mix together all except the corn chips.
- Pour into a 2 qt. casserole dish
- At this point you can cover the dish with plastic wrap and put it in the fridge to be baked later.
- Top evenly with corn chip crumbs.

- In a large skillet heat oil over medium heat, saute the onions for 5 minutes, add mushrooms continue sauting for 4 minutes more.

- 1. I cooked sausage and onions in skillet. While cooking this I sprinkled on these ingredients: red pepper flakes, pepper, salt, paprika, ginger, and nutmeg. I cooked until sausage was browned and onions tender.
- 2. Then I added 1 teaspoon minced garlic (from a jar), 2 Tablespoons parsley, and a half Tablespoon up to 1 Tablespoon of dried basil, stirring to cook for a few seconds.
- 3. I then added ¼ cup flour to make a roux and cook for at least 2 or 3 minutes to cook out the raw taste of the flour. Then I added two cups of milk and a ¼ cup water. I cooked this until bubbly and beginning to thicken (WHICH TOOK ME SEVEN MINUTES). Then I added the COOKED egg noodles, stirring to combine. I poured the entire mixture into a buttered casserole dish (8x8).
- 4. For the topping: In a med bowl I crumbled up two pieces of bread, added ¾ cup grated parmesan cheese and mixed these together then poured 3 Tablespoons melted butter over the bread and parmesan cheese and mixed well. I sprinkled this over the casserole.
- 5. I put the casserole in a 400° pre-heated oven for about 30 minutes or until it is golden brown on top.
