This is so easy with amazing results. A mildly spiced summer sausage made with mustard seed and black pepper. It's great for snacks with chunks of cheese on the side.

2 pounds ground beef
2 tablespoons mustard seed
1 tablespoon garlic powder
2 tablespoons liquid smoke flavoring
2 tablespoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 teaspoon coarse ground black pepper

Steps:

  • In a large bowl, mix together the ground beef, mustard seed, garlic powder, liquid smoke, curing salt, and pepper using your hands. Form into two equal logs, and wrap each one in aluminum foil with the shiny side facing the meat. Refrigerate for 24 hours.
  • Preheat the oven to 325 degrees F (165 degrees C). Poke small holes through the aluminum foil in the bottom of the meat rolls using a toothpick. Place on a broiler rack and fill the broiler pan with 1/2 inch of water.
  • Bake for 90 minutes in the preheated oven. Cool slightly, then refrigerate for 12 hours before unwrapping and serving.

This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef.

2 tablespoons Worcestershire sauce
1/2 cup parmesan cheese, grated
1/3 teaspoon ground pepper

2 loaves miniature party rye rounds
1 lb lean ground beef
1 lb hot pork sausage (I use Jimmy Dean)
1 lb Velveeta cheese
1 teaspoon oregano
1/2 teaspoon garlic salt (more if desired)
1/2 teaspoon Worcestershire sauce

Steps:

  • Line cookie sheets with wax paper or parchment paper.
  • Spread party rye slices onto the lined cookie sheets (Makes approximately 60 pieces).
  • Brown Ground Beef and Pork Sausage together.
  • While browning meat, cut up velveeta into chunks.
  • Drain grease thoroughly from meat mixture.
  • Add all other ingredients to the meat mixture and cook until the cheese melts, stirring as it cooks.
  • Remove from heat and drop mixture by spoonfuls onto the party rye slices.
  • Place cookie sheets into freezer and freeze the party rye rounds.
  • When frozen, remove from cookie sheets and slide into plastic bags returning to the freezer for later use.
  • When ready to use, take desired amount from the bag and place on cookie sheet under the broiler until brown and bubbly.
