SAUSAGE, MOZZARELLA AND BROCCOLI RABE WITH SHELLS

SAUSAGE, MOZZARELLA AND BROCCOLI RABE WITH SHELLS image

Categories     Pasta     Dinner

Yield 4 people

Number Of Ingredients 12

2 tbsp olive oil
1 large onion, chopped
3 sprigs thyme
coarse salt and ground pepper
2 garlic cloves, chopped
3 links spicy Italian sausage (3/4 pound total), casings removed
1 tbsp all-purpose flour
1 can (28 oz) whole peeled tomatoes
8 oz med shell pasta
1 bunch broccoli rabe (about 1 lb), trimmed and coarsely chopped
6 oz fresh mozzarella, cut into 1/2 inch pieces
1/4 c grated parmesan

Steps:

  • Preheat oven to 400. In a large skillet, heat oil over med-high. Add onion and thyme; season with salt and pepper. Cook, stirring occasionally, until onion is golden brown, 15 mins (reduce heat if browning too quickly). Add garlic and sausage. Cook, breaking meat up with a wooden spoon, until browned, about 5 mins. Add flour and cook, stirring constantly, 30 secs. Add tomatoes, breaking them up with spoon. Cook sauce until slightly thickened, 5 to 8 mins. Season with salt and pepper. Discard thyme. Meanwhile, in a large pot of boiling salted water, cook pasta 4 mins less than pkg instructions. Add broccoli rabe to pot and cook 15 secs. Drain pasta and broccoli and return to pot. Stir in sausage mixture. Transfer to a 3-quart baking dish or divide among 4 16-oz grain dishes. Top with mozzarella and parmesan. Bake until cheese has melted and liquid is bubbling, about 15 mins.

Tips:

  • Choose the Right Sausage: Opt for a high-quality sausage with bold flavors that can stand up to the other ingredients in the dish. Spicy Italian sausage or sweet Italian sausage are both great options.
  • Prepare the Broccoli Rabe Properly: Before cooking, trim the broccoli rabe florets from the stems and then wash them thoroughly. You can blanch the broccoli rabe in boiling water for a few minutes to tenderize it before adding it to the dish.
  • Cook the Sausage and Broccoli Rabe Together: This will help infuse the flavors of the sausage into the broccoli rabe and create a more cohesive dish.
  • Use High-Quality Mozzarella: Fresh mozzarella will melt beautifully and add a creamy texture to the dish. Avoid using pre-shredded mozzarella, as it doesn't melt as well.
  • Don't Overcook the Pasta: Pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will become mushy and ruin the texture of the dish.
  • Season to Taste: Add salt, pepper, and red pepper flakes to taste. You can also add a pinch of garlic powder or onion powder for extra flavor.

Conclusion:

This sausage, mozzarella, and broccoli rabe with shells is a delicious and satisfying meal that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its combination of savory sausage, tender broccoli rabe, melted mozzarella, and al dente pasta, this dish is sure to be a hit with everyone at the table.
