½ (8 ounce) package cream cheese, softened
1 (14 ounce) package Hillshire Farm® Smoked Sausage
2 fresh jalapeno peppers, halved lengthwise and seeded
4 slices bacon

Steps:

  • Cut cream cheese lengthwise into 4 pieces. Place on a plate and freeze 30 minutes.
  • Meanwhile, cut sausage crosswise into 4 portions. To create a pocket, cut each portion, lengthwise, three-fourths of the way through.
  • Place cream cheese pieces in the opening of each sausage portion. Then stuff each opening with half of a jalapeno.
  • Wrap a slice of uncooked bacon around each stuffed sausage and secure bacon with toothpicks as needed.
  • In a charcoal grill, arrange medium coals around the edge of the grill. Place a drip pan in the center of the grill. Place sausage, slit-side down, on a grill rack over the drip pan. Cover and grill 25 minutes or until sausage is browned and bacon is cooked through, turning (to slit-side up) halfway through grilling.
  • Let stand 10 minutes. Cut each sausage into 4 portions and serve with toothpicks as appetizers.

Use toothpicks to secure the bacon around the stuffed jalapenos. Be sure to use a pan that won't let the bacon drip all over the oven while cooking!

2 (12 ounce) packages ground sausage
2 (8 ounce) packages cream cheese, softened
30 jalapeno chile peppers
1 pound sliced bacon, cut in half

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.

1 pound ground Italian sausage (or regular pork or whatever appeals to you)
1 (8-ounce) package cream cheese, softened
1 cup shredded cheddar cheese (original recipe used parmesan)
1 pound jalapenos, halved lengthwise and seeded
1 green onion, finely chopped

Steps:

  • Preheat oven to 425°. Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease. In a bowl, mix the sausage, cream cheese, cheddar cheese, and green onion. Spoon about 1 tablespoon sausage mixture into each jalapeno half. Arrange stuffed halves in a baking dish. Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Tips on seeding the jalapenos. 1) Wear gloves throughout the entire process, then remove right after so you don't transfer to sink faucet, cabinet handles, etc. 2) I love my little lemon zester tool for seeding but a small melon baller works great too. 3) As you half and seed the jalapenos and put into a bowl of continuous running water. This helps soften to bake better and removes some heat.
