- 1. Prepare Jiffy cornbread according to package.Add approx 3/4 cup finely shredded cheddar cheese to batter.
- 2. Cut keilbasa in to 1/4 inch cubes and slice into small bits ( you will probably not use all of it)
- 3. Spray mini muffin pan with pam. (You will need two pans of 12 i one large or approx 24 depending on the size of the cups-(these are available disposable in the grocery store at 12 each sometimes) Scoop about 1 Tbs of cornbread mixture in each muffin cup. Place 2 -3 cubes of sausage and add pinch of cheese on top of each muffin. Bake at 400 degrees approx 8-10 mins or until done. Serve warm!
