1 (16 ounce) package dry corn bread mix
1 (15 ounce) can cream style corn
5 fluid ounces water
1 medium onion, diced
4 fresh jalapeno peppers, diced
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and set aside.
  • In a medium bowl, mix corn bread mix, cream style corn and water.
  • Cover the bottom of the prepared baking dish with about 1/2 inch of the corn bread mixture. Layer mixture with sausage, followed by onion and jalapeno. Cover with cheese. Top with remaining corn bread mixture, using only as much as will fit in the baking dish.

2 teaspoons minced fresh parsley or 1 teaspoon dried parsley flakes
1 tablespoon butter or margarine, melted

Steps:

3 tablespoons extra-virgin olive oil
1 small onion, thinly sliced
1 tablespoon minced garlic (from 3 cloves)
1 large orange or red bell pepper, ribs and seeds removed, cut into 1/4-inch slices
1 1/2 cups Arborio rice
3 cups low-sodium chicken broth
Coarse salt and freshly ground pepper
2 small ears fresh corn, husks and silks removed, cut into 1-inch rounds
Cilantro leaves, for serving

Steps:

  • Preheat oven to 375 degrees. Pierce sausage all over with the tip of a paring knife. In a large straight-sided ovenproof skillet, heat 1 tablespoon oil over medium-high. Add sausage and cook, turning occasionally, until browned, about 3 minutes. Transfer to a plate.

1 tbsp grated parmesan
