SAUSAGE CHEESE BISCUITS (MUFFINS)
Super easy and delicious recipe using muffin tins. From Some Like it Hot. Sometimes I cannot find the 10 count flaky biscuits. Last time I made them I used Grands Flaky biscuits (8 count) and could only divide into two layers. I added an extra ten minutes to the bake time.

- Add sausage and continue to cook until the sausage is fully cooked.
- Turn heat down and simmer another 10 minutes.
- Stir in flour and cook for 5 minutes, stirring constantly.
- The bottom of the pan will be brown with bits of stuck on meat and flour.

- Remove pan from heat and stir in milk, cream and cheese slices.
- Stir until you can not feel anything stuck to the bottom of the pan.
- Place back on low heat and bring to a simmer.
- The gravy will thicken as it cooks and may need a little extra milk if it is thicker than you like it.
- Simmer for 10 minutes or longer, being sure to stir often.
- Taste for seasonings, add salt and pepper if desired.
- Normally I don't add any as the sausage flavors the gravy just right.

- Add the butter and work into flour until the mixture is crumbly.
- Add the sausage and cheese, and mix to distribute.

- Pat or roll it into an 8" x 10" rectangle about 3/4" thick.
- Cut the dough into twenty 2" squares.
- If you've been working on parchment, simply lift the parchment onto a baking sheet. Separate the biscuits so there's about 1" between them.
- If the biscuits aren't on parchment, space them on a lightly greased baking sheet, leaving about 1" between them.
- Bake the biscuits for 20 to 25 minutes, or until they're a medium- to deep-golden brown.
- Remove from the oven, and cool on a rack briefly. Serve warm.
- Note: Great candidate for freezing. Make biscuits, shape, and place on a pan. Freeze, then transfer to a plastic ziplock bag to store. When you're ready to bake, remove them from the freezer, thaw and bake as directed above.
Tips:
- Use a sharp knife to cut the sausage. This will help to ensure that the sausage is evenly cooked.
- Grate the cheese yourself. Pre-shredded cheese often contains additives that can affect the flavor and texture of the biscuits.
- Don't overwork the dough. Overworking the dough will make the biscuits tough.
- Chill the dough before baking. This will help the biscuits to rise properly.
- Bake the biscuits until they are golden brown. This will ensure that they are cooked through.
Conclusion:
Sausage cheese biscuits are a delicious and easy-to-make breakfast or snack. They are perfect for on-the-go meals or for potlucks. With a few simple ingredients, you can create a batch of fluffy, cheesy biscuits that are sure to please everyone.
