This is a hardy casserole, our friend Joe, loves making this. He changes up the sausage from time to time but always uses something with a kick to it.

ITALIAN SAUSAGE AND BEEF RICE CASSEROLE
Inexpensive and easy to make...you can't beat that. Even my pickiest of eaters asks for 2nds. This recipe actually makes enough meat and sauce to freeze half and make the dish a second time saving even more money.

SAUSAGE AND BEEF CASSEROLE
I received this recipe from my mothers best friend Lucy. This is one of my favorite meals. This is a great dish for pot-lucks. It would also be great on a cold winters night. I also like to make it a day or two before it is to be eaten.

Steps:
- Heat the oven to 350° F (180° C/Gas 4). Lightly grease or spray a 2 1/2 to 3-quart baking dish with nonstick cooking spray. Heat the olive oil in a large skillet over medium heat. Add the ground beef, sausage, and onion. Cook, stirring, until the meat is no longer pink and the onion is translucent. Add the garlic to the meat mixture and cook, stirring, for 1 minute longer. Add the crushed tomatoes, tomato paste, basil, oregano, and crushed red pepper. Cook, stirring occasionally, for about 10 to 12 minutes. Taste and add salt and pepper, as needed. In a large bowl, combine the ricotta cheese, 1/2 cup of Parmesan cheese, the egg, and 1 cup of Mozzarella cheese. Stir until well blended. While the sauce is simmering, cook the ziti in boiling salted water following directions on the package. Drain well. Add the hot drained pasta to the bowl with the ricotta cheese mixture. Toss lightly to blend. Add 2 cups of the meat sauce to the ziti mixture. Transfer half of the pasta mixture to the prepared baking dish. Spread about half of the meat sauce over the pasta, then top with the remaining Parmesan cheese and half of the remaining Mozzarella. Top with the remaining pasta mixture, then finish with the remaining meat sauce and remaining Mozzarella cheese. Sprinkle with the chopped parsley. Bake for 25 minutes, or until hot and bubbly around the edges.

Steps:
- 1. Brown sausage, ground beef and garlic. Make both pkgs of rice as directed. Add rice to drained sausage and ground beef. Add corn, salsa, olives and tomatoes. Pour both pkgs of taco seasoning in, and stir.. Add in cubed velveeta. Pour 1/2 of the mix into a deep casserole dish (I used a disposable aluminum one), layer 1/2 of the shredded cheese, followed by the rest of the mix. Bake for 25 mins @ 350°. After 25 mins, put the rest of the shredded cheese on it and put back in the oven until melted.
Tips:
- Use high-quality meat: Opt for lean ground beef and flavorful sausages to elevate the casserole's taste.
- Brown the meat thoroughly: This step adds depth of flavor and prevents the meat from becoming dry.
- Don't overcrowd the pan: Cook the meat in batches if necessary to avoid steaming rather than browning.
- Use a variety of vegetables: Incorporate colorful and nutritious vegetables like carrots, celery, onions, and bell peppers.
- Homemade tomato sauce: If you have time, prepare a homemade tomato sauce using fresh tomatoes or high-quality canned tomatoes for a richer flavor.
- Season well: Use a combination of herbs, spices, and seasonings to enhance the casserole's flavor. Consider using garlic, oregano, basil, thyme, paprika, and salt and pepper to taste.
- Simmer gently: Bring the casserole to a boil, then reduce the heat to low and let it simmer for at least 30 minutes to allow the flavors to meld.
- Top with cheese: Before serving, sprinkle a generous amount of cheese over the casserole and broil until melted and golden brown for an extra layer of flavor and texture.
Conclusion:
This sausage beef casserole is a hearty, flavorful, and comforting dish that can be enjoyed by people of all ages. It's a great way to use up leftover meat and vegetables, and it's also a budget-friendly meal. With its simple ingredients and easy preparation, this casserole is a perfect choice for busy weeknights or casual gatherings. Serve it with a side of mashed potatoes, rice, or crusty bread for a complete and satisfying meal.
