You Won't Be Single For Long Vodka Cream Pasta image

This recipe will make enough for two couples. If you plan a romantic evening where more than two's a crowd, reserve half the sauce to freeze for another supper before the addition of basil, and only cook 1/2 to 2/3 pound of penne.

Time 25m

Yield 4 servings

Number Of Ingredients 12

1 tablespoon extra-virgin olive oil, once around the pan in a slow stream
1 tablespoon butter
2 cloves garlic, minced
2 shallots, minced
1 cup vodka
1 cup chicken stock
1 can crushed tomatoes (32 ounces)

Bring sauce to a bubble and reduce heat to simmer. Season with salt and pepper.
  • While sauce simmers, cook pasta in salted boiling water until cooked to al dente (with a bite to it). While pasta cooks, prepare your salad or other side dishes.

Tips:

  • Choose high-quality ingredients: Use the best quality sausage, vodka, and tomatoes you can find. Fresh herbs and spices will also make a big difference in the flavor of the sauce.
  • Don't overcrowd the pan: When browning the sausage, be sure to do it in batches so that the sausage doesn't steam instead of brown.
  • Let the sauce simmer: Simmering the sauce for at least 30 minutes will help to develop the flavors and thicken the sauce.
  • Use a good quality pasta: The type of pasta you use will also affect the flavor of the dish. Choose a pasta that is sturdy enough to hold up to the sauce, such as penne or rigatoni.
  • Garnish with fresh herbs: Before serving, garnish the pasta with fresh herbs such as basil, parsley, or oregano. This will add a pop of color and flavor to the dish.
