My husband's grandmother used to make this soup with her own homemade sausage and tortellini. Since the recipe has been passed down, we don't hand make those ingredients, but this version is almost as good as hers. 1/2 pound bulk Italian sausage
1 small onion, thinly sliced
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium chicken broth
1/2 cup water
1-1/2 cups torn fresh spinach
3/4 cup refrigerated cheese tortellini
2 tablespoons shredded Parmesan cheese
Crushed red pepper flakes, optional

Steps:

  • In a small saucepan, cook sausage over medium heat until no longer pink; drain. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in broth and water; bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes., Return to a boil. Reduce heat, add spinach and tortellini; cook until tortellini is tender, 7-9 minutes. Sprinkle with cheese. If desired, top with crushed red pepper flakes.

2 (14.5 ounce) cans chicken broth
1 (9 ounce) package cheese tortellini
¼ tablespoon dried basil
¼ tablespoon garlic powder

Steps:

  • In a large pot over high heat, combine the spinach and chicken broth. Heat to boiling, then reduce heat to low. Stir in tortellini, and simmer for 10 to 15 minutes, or until the tortellini is cooked to desired tenderness. Season with basil, garlic powder, salt, and pepper.

1 pound mild sausage, removed from casings
1 medium onion, finely chopped
6 cloves garlic, finely chopped
1 (32 ounce) carton chicken broth
1 (14 ounce) can chicken broth
1 pound frozen cheese tortellini
1 (14 ounce) can diced tomatoes
1 (10 ounce) package fresh spinach, coarsely chopped
10 leaves fresh basil, chopped
½ teaspoon red pepper flakes, or to taste
1 pinch salt and ground black pepper to taste
½ cup grated Parmesan cheese, or as needed

Steps:
