**Sausage and sauerkraut** is a classic German dish that is enjoyed all over the world. It is a simple, yet flavorful dish that is perfect for a cold winter day. The main ingredients in sausage and sauerkraut are, of course, sausage and sauerkraut. The sausage is typically a smoked sausage, such as kielbasa or bratwurst. The sauerkraut is a fermented cabbage that has a slightly sour flavor. In addition to these two main ingredients, sausage and sauerkraut often includes other ingredients such as onions, apples, and caraway seeds. The dish is typically served with mashed potatoes or dumplings.
**This article provides three different recipes for sausage and sauerkraut**. The first recipe is a **traditional German sausage and sauerkraut** recipe that uses smoked sausage, sauerkraut, onions, and caraway seeds. The second recipe is a **Polish sausage and sauerkraut** recipe that uses kielbasa, sauerkraut, and onions. The third recipe is a **vegetarian sausage and sauerkraut** recipe that uses vegetarian sausage, sauerkraut, onions, and apples. All three recipes are easy to follow and make a delicious and hearty meal.

POLISH SAUSAGE AND SAUERKRAUT CASSEROLE (KAPUSTA)
When my husband's Grandmother died, I was the designated person to bring this to all holiday dinners (even though I'm Irish!) since I learned what to do by watching her. She always used fresh rather than smoked Polish Sausage.

It was probably to stretch the quantity, but I don't do it anymore!).

KRAPT AND SAUSAGE (SAUERKRAUT AND SMOKED SAUSAGE)
My son was about a year and a half old, my dad was eating leftovers and he barely had enough to satisfy his hunger, and my son indicated that he wanted to eat some of what his granddaddy was eating. Being a good grandfather, he relented and gave into my son's wishes. Being older and FAR more treacherous than my toddler, Dad offered up a bite of the sauerkraut to my son, fully expecting my son to dislike the taste, and thereby saving more of the leftovers to satisfy my father's hunger. Boy, was he wrong! My son was still working on his language skills, and his new favorite food, kraut, was now called "KRAPT!" This is the recipe to the dish my father was eating that night.

ITALIAN SAUSAGE AND SAUERKRAUT
I love Italian Sausage and I love Sauerkraut. I thought I would cook the two together and see how it would turn out. It was really good. Sauerkraut can tend to be a little "gassy" so I always put beer in it to neutralize the acidity in the sauerkraut. It seems to do the trick for me. Sometimes draining and rinsing the sauerkraut just isn't enough. Beer also gives the sauerkraut a good flavor. The pears give it a little bit of a sweetness. Cooking time is approximate since some people may want to cook it longer than the suggested 30 minutes. This can serve either 2 or 4 people depending on how many sausages and how much sauerkraut each person may want.

- Add sauerkraut, parsley and broth. Cook until thickened and paste-like, about 3 minutes or so. Spread out the mixture on a cookie sheet or platter and chill in the fridge for about 3 hours.
- Add oil to skillet about 1" deep. Heat your oil. If you use a deep fryer, heat to 375°F.
- In one bowl, whisk the egg, milk and 2 1/2 cups of flour. In another bowl, add the breadcrumbs, garlic salt and dried parsley.
- Remove sauerkraut from fridge and roll into small balls, about 1" in diameter. Dip the balls into the egg mixture and then roll them in the bread crumb mixture.
