2 tablespoons butter
1 (6.2-oz.) pkg. fast-cooking long-grain and wild rice mix (with seasoning packet)
1/2 cup pineapple preserves
1 lb. cooked kielbasa, halved lengthwise, cut into 1-inch slices
1 medium onion, finely chopped
1 medium green bell pepper, cut into 3/4-inch pieces
1 medium red bell pepper, cut into 3/4-inch pieces
1 (8-oz.) can pineapple chunks in unsweetened juice, undrained

Steps:

  • Heat oven to 375°F. In small saucepan, bring water and butter to a boil.
  • In ungreased 2 1/2-quart casserole, combine all ingredients including contents of seasoning packet and boiling water; mix well. Cover.
  • Bake at 375°F. for 40 to 45 minutes or until rice is tender. Let stand 10 minutes before serving.

1 lb mild Italian sausage
1 medium onion, chopped
3 cups cooked white rice
1 (15 ounce) can Italian-style tomato sauce
1/2 teaspoon salt
1 1/2 cups sliced zucchini
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • Cook sausage and onion in large skillet over medium high heat, 3 minutes or until sausage is no longer pink. drain.
  • Spoon mixture in 2-quart casserole dish. Stir in cooked rice, tomato sauce, and salt.
  • Add zucchini to skillet. Cook 5 minutes or until tender.
  • Arrange zucchini over rice mixture,.

1 lb sausage
1 cup celery, sliced
3/4 cup onion, green
3/4 cup green pepper, chopped
1/2 teaspoon seasoning salt
1/4 teaspoon seasoned pepper
2 3/4 cups chicken broth
1/2 cup pecan halves

Steps:

  • In a shallow 2 qt casserole, place rice. Set aside.
  • In a large skillet, over medium heat, saute sausage, stirring to crumble meat. Drain and discard excess fat. In the same skillet, combime celery, onions and green peppers with sausage.
