Time 1h10m

Yield 4 servings

Number Of Ingredients 16

4 tablespoons extra-virgin olive oil
1 cup chopped onion
1 pound hot Italian sausage, casings removed
1 tablespoon chopped garlic
1 tablespoon chopped fresh oregano
1 cup chopped roasted red peppers
8 large eggs
1/4 cup heavy whipping cream
1 cup crumbled feta cheese
Pinch of smoked salt
Freshly ground black pepper
1 bunch fresh chives, chopped
1 lemon, zested and juiced
1 cup sour cream
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • For the frittata: Preheat the oven to 325 degrees F.
  • In a large ovenproof saute pan over high heat, add the olive oil, onions, sausage, garlic and oregano, stirring frequently to break up the clumps. Add the roasted peppers and cook about 10 minutes.
  • In a large bowl, whisk together the eggs, cream, feta cheese, smoked salt and pepper. Pour the mixture into the saute pan and bake until the eggs are set and golden brown and the frittata pulls away from the sides slightly, about 35 minutes. Remove the frittata from the oven and let cool about 10 minutes.
  • For the sauce: In a small bowl, combine the chives, lemon zest and juice, sour cream and olive oil. Season with salt and pepper.
  • Cut the frittata into pieces and serve with dollop of the sour cream sauce.

SAUSAGE AND RED PEPPER FRITTATA

Sausage and Red Pepper Frittata image

This easy frittata recipe is the perfect option for when you are craving the classic Italian combo of sausage and peppers. Cooking the peppers and onions before adding the egg ensures every bite out of the oven is sweet and tender.

Provided by Food Network Kitchen

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 9

1 tablespoon olive oil
8 ounces sweet Italian sausage, casings removed and broken into small pieces
1 medium red bell pepper, diced
1 small onion, diced
1 tablespoon chopped fresh rosemary
12 large eggs
1/3 cup heavy cream
1 cup shredded Italian blend cheese
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 300 degrees F.
  • Heat the olive oil in an oven-safe, 10-inch nonstick skillet over medium-high heat. Add the sausage and cook, stirring occasionally and breaking up the pieces with a wooden spoon, until no longer pink in the middle and cooked through, 6 to 7 minutes. Use a slotted spoon to remove the sausage to a plate. Add the pepper and onion to the skillet and cook, stirring occasionally, until softened, 5 to 6 minutes. Stir in the rosemary and cook until just fragrant, about 1 minute.
  • Meanwhile, whisk the eggs, cream, cheese, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until combined. Remove the skillet from the heat and add the sausage. Pour the egg mixture on top and gently stir to incorporate the fillings. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes.
  • Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

Tips:

  • Choose the right type of sausage: Italian sausage or chorizo are both good choices for this recipe, as they have a nice spicy flavor. You can also use breakfast sausage, but it will be less flavorful.
  • Don't overcrowd the pan: When cooking the sausage and peppers, make sure not to overcrowd the pan. This will prevent the sausage from browning properly and the peppers from getting soft.
  • Use a good quality cheese: The cheese you use in your frittata will make a big difference in the flavor. Use a cheese that melts well, such as cheddar, mozzarella, or Gruyère.
  • Don't overcook the frittata: The frittata is done cooking when the eggs are just set and the center is still a little jiggly. If you overcook it, the eggs will become tough and rubbery.
  • Let the frittata cool slightly before serving: This will help it to hold its shape when you cut it.

Conclusion:

This sausage and red pepper frittata is a delicious and easy-to-make breakfast, lunch, or dinner. It's packed with flavor from the sausage, peppers, and cheese, and it's sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy meal, give this frittata a try!
