1 small yellow onion (sliced into 1/4-inch strips)
3 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
2 garlic cloves (minced (about 2 teaspoons))
1/2 teaspoon kosher salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (plus additional to taste)

2 green peppers, cut into strips (I used red, orange and green)
1 medium onion, sliced (type of onion is your preference)

2 teaspoons garlic powder

nonstick cooking spray
aluminum foil

  • -Preheat oven to 375°F.
  • -Line a small 8-inch square pan with foil.

Kosher salt and freshly ground black pepper
4 hoagie rolls, for serving

Steps:

  • Preheat the oven to 425 degrees F and line a rimmed baking sheet with parchment paper. Place the onions on the prepared baking sheet and toss with 1 tablespoon olive oil and some salt and pepper. 2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips

½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
