Categories     Pasta

Time 35m

Number Of Ingredients 16

1 16 oz box of penne pasta white or tricolor
2 Tbsp olive oil
1 lb sweet italian sausage links, casings removed and crumbled
1/2 tsp crushed red pepper flakes
1/2 c diced red onion
4 clove garlic, minced
1 c sliced mushrooms
1 Tbsp butter
1 28 oz can of diced tomatoes, drained
1 1/2 c heavy whipping cream or you can use half and half( i used heavy cream)
1/2 tsp salt
1 tsp black pepper
1 tsp italian seasoning
1/2 c shredded parmesan cheese
shredded parmesan for topping
parsley, fresh or dried for sprinkling

Steps:

  • 1. Heat olive oil in a large skillet over medium heat. Add crumbled sausage and crushed red pepper. Cook until sausage is no longer pink, stirring frequently about 8 minutes. While your sausage is cooking, start your water for your pasta to cook in. Melt butter in a small skillet over medium heat and cook mushrooms until they begin to brown.
  • 2. Add onion and garlic to sausage in skillet. Cook until onion is tender and sausage is light brown, stirring occasionally. When your pasta water comes to a boil, cook penne to desired doneness. When pasta is done drain well and return to cooking pot.
  • 3. Add tomatoes, cream, salt, pepper, Italian Seasoning, and browned mushrooms to sausage in skillet. Stir to mix and then add the 1/2 cup shredded parmesan cheese and stir. Simmer until mixture slightly thickens, about 5 minutes.
  • 4. When sausage mixture has thickened and looking yummy add it to drained pasta in the large pot. Give it a good stir to get a good mixture of ingredients. Plate your serving and sprinkle with desired amount of parsley and shredded parmesan. Enjoy, I know I do!

Tips:

  • Mise en Place: Before you start cooking, make sure all your ingredients and equipment are ready to go. This will help you stay organized and prevent any scrambling.
  • Choose the Right Sausage: The type of sausage you use will greatly affect the flavor of your dish. For a classic Italian flavor, use sweet Italian sausage. For a spicy kick, try chorizo or hot Italian sausage. You can also use a combination of different sausages for a more complex flavor.
  • Cook the Sausage Properly: To ensure the sausage is cooked through, brown it over medium heat in a large skillet until it is no longer pink in the center. This should take about 5-7 minutes.
  • Use a Quality Pasta: Penne is a great choice for this dish because it holds the sauce well. However, you can use any type of pasta you like.
  • Cook the Pasta Al Dente: To prevent the pasta from becoming too mushy, cook it al dente, which means "to the tooth." This means that the pasta should be slightly firm when you bite into it.
  • Make a Flavorful Sauce: The sauce is what brings this dish together. Use a combination of crushed tomatoes, tomato paste, garlic, oregano, and basil to create a rich and flavorful sauce.
  • Don't Overcrowd the Pan: When cooking the pasta, be sure not to overcrowd the pan. This will prevent the pasta from cooking evenly.
  • Season to Taste: Once the dish is cooked, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, or Parmesan cheese.

Conclusion:

Sausage and penne pasta is a classic Italian dish that is easy to make and always a hit with a crowd. By following these tips, you can create a delicious and flavorful dish that your family and friends will love. You can also experiment with different ingredients to create your own unique version of this dish. For example, you could add vegetables such as bell peppers, zucchini, or mushrooms. You could also use a different type of cheese, such as mozzarella or fontina. No matter how you make it, sausage and penne pasta is sure to be a delicious and satisfying meal.
