4 cups plus 1 tablespoon all-purpose flour, divided
2 tablespoons baking powder
2 teaspoons salt
3/4 pound cold unsalted butter, diced
4 extra-large eggs, beaten lightly
1 cup cold heavy cream
1/2 pound extra-sharp yellow Cheddar, small-diced
1 cup minced fresh dill
1 egg beaten with 1 tablespoon water or milk, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine 4 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with a paddle attachment. Add the butter and mix on low speed until the butter is in pea-sized pieces. Mix the eggs and heavy cream and quickly add them to the flour-and-butter mixture. Combine until just blended. Toss together the Cheddar, dill, and 1 tablespoon of flour and add them to the dough. 4 cups all-purpose flour
2 tablespoons baking powder
4 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon ground red pepper
6 tablespoons chilled butter, cut into pieces
1 1/2 cups sharp cheddar cheese, shredded
1 1/2 cups ground sausage, cooked
1 1/2 cups low-fat buttermilk
4 large egg whites

Steps:

  • Preheat oven to 400°F.
  • Combine flour, baking powder, sugar, salt and pepper in a large mixing bowl. Cut butter into the bowl, mixing it up until it looks a little like meal.
  • Stir in the cheese and sausage.
  • Combine buttermilk and egg white together with a whisk.
  • Add the liquid ingredients to the dry ingredients until just moist.
  • Turn dough out onto a lightly floured surface; knead lightly 4-5 times with floured hands. Note: The dough will be sticky.
  • Pat dough into two 8-inch circles on prepared baking sheet (spray with cooking spray).
