Time 1h15m

Yield 6 servings

Number Of Ingredients 13

4 tablespoons unsalted butter
8 cups 1/2-inch cubes brioche, crusts removed
8 ounces sweet Italian sausage, casings removed
1 cup finely chopped butternut squash
4 leeks, white and light green parts only, thinly sliced
1 tablespoon fresh thyme leaves, chopped
Kosher salt and freshly ground black pepper
1 1/2 cups chicken broth
1 cup heavy cream
1/4 cup fresh flat-leaf parsley leaves, chopped
3 tablespoons minced fresh chives, plus more for garnish
4 large eggs
2 cups grated Gruyere

Steps:

  • Preheat the oven to 350 degrees F. Grease six 12-ounce ramekins with 2 tablespoons of the butter and set aside on a rimmed baking sheet.
  • Spread the brioche on a second rimmed baking sheet and bake, tossing halfway through, until lightly browned, about 15 minutes.
  • Melt the remaining 2 tablespoons butter in a large skillet over medium-high heat. Add the sausage and squash and cook, breaking up the meat with the back of a spoon, until the sausage is browned and the squash is tender, about 8 minutes. Stir in the leeks, thyme, 1 teaspoon salt and 1/2 teaspoon pepper and continue to cook, stirring often, until the leeks are wilted and softened, about 5 minutes.
  • Whisk together the chicken broth, cream, parsley, chives and eggs in a medium bowl. Add half the brioche to the ramekins. Divide the sausage mixture among the ramekins; top with 1 cup of the Gruyere and the remaining brioche. Pour the egg mixture over and sprinkle with the remaining 1 cup Gruyere.
  • Set aside at room temperature for 15 minutes to allow the bread to absorb the egg mixture. Bake on the baking sheet until the custard is set and the bread pudding is puffed and golden, about 20 minutes. Sprinkle with chives before serving.

FRENCH ONION STUFFING

French Onion Stuffing image

Golden caramelized onions and mushrooms are the building blocks of this vegetarian stuffing inspired by French onion soup. The onions take some time to cook, but the meltingly tender result brings rich sweetness to the dish. Mushrooms are added for their texture, and mushroom broth reinforces the stuffing with more depth. An initial steam helps soften the big mound of raw onions to make caramelizing them easier and faster. The onions can be cooked the day before (through Step 3) and refrigerated, then rewarmed before using.

Time 1h45m

Yield 6 to 8 servings

Number Of Ingredients 13

1 (1-pound) country bread loaf, cut into 1- to 1½-inch pieces
8 tablespoons unsalted butter, plus more for greasing the pan
4 tablespoons neutral oil, such as safflower or canola oil
2 cups finely chopped celery (from about 4 ribs)
5 garlic cloves, minced
4 ounces whole white mushrooms, finely chopped (1 1/4 cups)
Salt and black pepper
2 tablespoons fresh thyme leaves, plus 1 thyme sprig
4 pounds yellow onions, halved and thinly sliced (16 packed cups)
1/4 cup dry white wine
3 cups mushroom broth
3 large eggs, beaten
Chopped chives, for garnish

Steps:

  • Heat oven to 350 degrees. Spread bread on a rimmed baking sheet, and bake until very dry and light golden, about 15 minutes. Remove bread and increase oven temperature to 425 degrees. Grease a 9-by-13-inch baking dish with butter.
  • Meanwhile, in a large pot with a lid, heat 2 tablespoons oil over medium. Add celery and cook, stirring occasionally, until softened, 5 minutes. Stir in garlic until fragrant, 30 seconds. Add mushrooms, season with salt and pepper, and cook, stirring occasionally, until mushrooms are tender and mixture is dry, about 5 minutes. Stir in thyme leaves and transfer mixture to a large bowl.
  • In the same pot, add the remaining 2 tablespoons oil and melt 6 tablespoons of the butter over medium. Add onions and thyme sprig, season with salt and pepper, and stir to evenly coat in the oil and butter. Cover and cook, stirring after 5 minutes, until onions soften and reduce in volume, about 10 minutes. Increase heat to medium-high and cook uncovered, stirring frequently to scrape up browned bits, until onions are very soft and deep golden, about 25 minutes. Reserve 1 cup of the onions in a small bowl.
  • Add wine to pot and stir until all of the liquid is absorbed, about 1 minute. Add broth and bring to a boil over high. Reduce heat to medium and simmer for 5 minutes to allow flavors to meld; discard the thyme sprig. Remove from the heat.
  • Add eggs to the mushroom mixture in the large bowl and mix well. Add the bread, then pour over the onion mixture. Season with salt and pepper, and gently toss until well combined. Transfer to the prepared baking dish. Top with the reserved onions and dot with the remaining 2 tablespoons butter.
  • Cover tightly with foil and bake until stuffing is hot throughout, 30 minutes. Uncover and continue to bake until crisp in spots, about 15 minutes longer. Garnish with chives and serve warm.

Caramelized Onion Bread Pudding Recipe - (4.4/5) image

Provided by Susan52

Number Of Ingredients 10

2 tablespoons unsalted butter
2 cups thinly sliced leeks, white and yellow parts only (leeks, ramps and/or spring onions)
4 ounces thinly sliced shiitake mushrooms, stems removed
3/4 teaspoon coarse salt, divided
3/4 teaspoon freshly ground black pepper, divided
1 teaspoon brown sugar
1/2 teaspoon freshly grated nutmeg
1 (1-pound) loaf ciabbata bread, cut into 1-inch cubes (about 12 cups) 1 bunch green onions, finely chopped4 eggs
6 cups whole milk
1 1/2 cups grated Gruyère cheese

Steps:

  • Heat butter in a sauté pan over medium heat. Add leeks, mushrooms, 1/2 teaspoon salt, 1/2 teaspoon pepper, brown sugar and nutmeg. Cook, stirring occasionally, until leeks are soft and golden brown, about 30 minutes. Place bread cubes on a baking sheet and bake 15 minutes or until dry and lightly browned. Preheat oven to 350F. Grease a shallow 4-quart baking dish. Combine leek mixture, bread cubes and remaining ingredients. Mix well and let stand 20 minutes. Press mixture into prepared pan and sprinkle with remaining salt and pepper. (You may cover and refrigerate the bread pudding up to 4 hours before baking.) Bake about 1 hour, or until pudding is set and golden brown on top. Remove from the oven and let cool 10 minutes before serving.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the bread pudding will be. Use fresh, flavorful sausage, sweet onions, and a good quality bread.
  • Caramelize the onions properly: This is an important step that adds a lot of flavor to the bread pudding. Cook the onions over low heat until they are golden brown and caramelized.
  • Don't overmix the batter: Overmixing can make the bread pudding tough. Mix the ingredients until they are just combined.
  • Use a baking dish that is large enough: The bread pudding will rise during baking, so make sure to use a baking dish that is large enough to accommodate it.
  • Bake the bread pudding until it is set: The bread pudding is done baking when a toothpick inserted into the center comes out clean.

Conclusion:

Sausage and caramelized onion bread pudding is a delicious and easy-to-make dish that is perfect for a brunch, lunch, or dinner. It is also a great way to use up leftover bread and sausage. With its savory and sweet flavors, this bread pudding is sure to be a hit with everyone who tries it.
