MEATBALL AND TORTELLINI SOUP

Meatball and Tortellini Soup image

This soup is a mixture of my mother's recipe and my own adjustments. It is perfect for a cold day and is usually even better the next day. Simply put it back on the stove, add a little water if needed, and warm it up. There is a lot of prep, especially because of making the meatballs homemade, but it is so worth it. My very favorite soup and full of good ingredients! My kids and husband love it too! Serve with Parmesan cheese and toasted bread.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the taste of your soup.
  • Don't overcrowd the pot: If you add too much meat or vegetables to the pot, the soup will be too thick and the flavors won't be as pronounced.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste until the soup is flavorful but not too salty.
  • Serve the soup with a variety of toppings: Grated Parmesan cheese, chopped parsley, and a dollop of sour cream are all great options.

Conclusion:

Saucy tortellini and meatball soup is a hearty, flavorful soup that's perfect for a cold winter day. It's easy to make and can be tailored to your own preferences. So next time you're looking for a comforting meal, give this soup a try. You won't be disappointed!
