8 boneless pork chops (1/2 inch thick)
2 tablespoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
2 (10 3/4 ounce) cans condensed cream of chicken soup, undiluted
1 medium onion, chopped
1/2 cup ketchup
2 tablespoons Worcestershire sauce

Steps:

  • In a large skillet, cook pork chops in oil until lightly browned on each side.
  • Sprinkle with salt and pepper and place in crockpot.
  • In a bowl, combine the soup, onion, ketchup and Worcestershire sauce and pour over chops.
  • Cover and cook on high for 4-5 hours or until meat juices run clear.

1 tablespoon vegetable oil
4 -6 pork chops (1 inch thick)
2 leeks, white part only, cleaned and thinly sliced
2 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1/2 cup madeira wine or 1/2 cup orange juice
1/4 cup orange marmalade
1/2 cup dried cranberries

Steps:

  • In a nonstick skillet, heat oil over medium-high heat. Brown pork chops on both sides and transfer to slow cooker. Drain fat from pan.
  • Reduce heat to medium. Add leeks and cook, stirring, until softened. Add garlic, salt and peppercorns. Cook, stirring for 1 minute. Stir in port, marmalade and cranberries and bring to a boil.
  • Pour mixture over pork. Cover and cook on low for 5 hours or on high for 2 1/2 hours, until pork is tender and just a hint of pink remains. Serve immediately.

4 pork loin chops with bone (I get fairly thick chops so they don't dry out in the crock pot)
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons vegetable oil (I like to use either canola or olive oil)
2 cups no-sugar-added ketchup (low carb)
1/2 cup packed splenda brown sugar substitute
1 teaspoon hickory-flavored liquid smoke (don't omit this!)

Steps:

  • Sprinkle pork chops with garlic powder, salt and pepper.
  • In a large skillet, brown the pork chops in oil on both sides.
  • In a bowl, combine the ketchup, brown sugar and liquid smoke.
