2 teaspoons butter
2 heads cauliflower
2 heads broccoli
½ cup butter
½ cup all-purpose flour
4 cups milk
1 tablespoon mustard powder
1 tablespoon Worcestershire sauce
½ teaspoon ground black pepper
2 cups grated Cheddar cheese
1 cup Italian seasoned bread crumbs
¼ cup extra-virgin olive oil
1 pinch paprika, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a baking dish with 2 teaspoons butter.
  • Core and cut cauliflower into large florets. Cut broccoli into large florets; peel and quarter broccoli stalks.
  • Bring a large stockpot of water to a boil; add cauliflower and boil until tender but still firm, 8 to 10 minutes. Transfer cauliflower to strainer using a slotted spoon; run under cold water to stop cooking. Add broccoli stalks to stockpot and boil 3 minutes; add broccoli florets to stockpot and boil until stalks and florets are tender but still firm, about 5 minutes more. Transfer broccoli to strainer and run under cold water to stop cooking. Dry cauliflower and broccoli with paper towels and place in prepared baking dish.
  • Melt 1/2 cup butter in saucepan over medium heat. Whisk in flour to form a thick paste. Continue whisking constantly until flour begins to brown, about 4 minutes. Add milk and bring to a boil, whisking constantly, until sauce thickens, 2 to 4 minutes more. Remove sauce from heat; whisk in mustard, Worcestershire sauce, and pepper. Whisk in Cheddar cheese until melted and fully incorporated. Pour cheese sauce over cauliflower and broccoli. Rap baking dish on counter a few times to remove air bubbles.
  • Mix bread crumbs and olive oil together in a small bowl. Top vegetable and sauce mixture with bread crumb mixture. Sprinkle paprika over bread crumb mixture.

1 (2 pound) head cauliflower, trimmed and cut into 1-inch florets
1 pound broccoli florets, cut into 1-inch pieces
¼ cup unsalted butter, divided
2 tablespoons all-purpose flour
2 cups whole milk
2 ounces reduced-fat cream cheese, at room temperature
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground pepper
¼ teaspoon salt
1 cup shredded sharp white Cheddar cheese
¾ cup panko breadcrumbs
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375°F. Coat a 2-quart baking dish with cooking spray; set aside.
  • Add 1 inch of water to a large stockpot fitted with a steamer basket; cover and bring to boil. Add cauliflower florets first, then top with broccoli florets; steam, covered, until slightly tender, about 6 minutes. Remove the vegetables from the pot; set aside. Discard the water and clean the pot.

3 c each - broccoli & cauliflower florets - steamed just until tender - ( or boil in salted water )
CHEESE SAUCE
2 Tbsp butter
3 Tbsp flour
1/4 tsp each - salt & pepper
pinch nutmeg
1 1/2 Tbsp dried chives
2 c milk
3/4 c sharp cheddar cheese
1/2 c parmesan cheese
TOPPING
1/2 c seasoned panko crumbs
1/2 c shredded cheddar cheese
1 1/2 Tbsp melted butter

Steps:

  • 1. Prepare your vegetables - either by steaming or boiling in salted water. Only cook until tender as they will cook more in oven and you don't want mushy vegetables. In a medium saucepan melt your butter over medium heat. Whisk into the butter your flour and cook for at least a minute, stirring continuously. Whisk in the milk and stir until thickened.
  • 2. Remove from heat and stir in the salt, pepper, chives, nutmeg and cheeses. Stir until cheese is melted. Preheat oven to 375 degree F.
  • 3. Pour 1/3 sauce into a 1 1/2 quart casserole dish. Place the vegetables over the sauce and evenly pour remaining sauce over the vegetables.
  • 4. In a small bowl, mix Panko crumbs with the cheese. Sprinkle evenly over the top of casserole. Drizzle melted butter over the crumbs.
  • 5. Place in oven and bake for 25 minutes or until bubbly and cheese is melted. Serve immediately.

¼ small onion, chopped
2 tablespoons all-purpose flour
1 cup half-and-half
1 ½ cups chicken broth
salt and ground black pepper to taste
2 cups chopped broccoli
1 carrot, chopped
1 celery stalk, chopped
1 ¼ cups shredded mild Cheddar cheese

Steps:

  • Melt butter in a stock pot over medium-high heat; add onion and saute until tender, 3 to 4 minutes. Whisk in flour and continue to stir until mixture turns golden brown, about 5 minutes.
