Categories     main-dish

Time 35m

Yield 8 servings

Number Of Ingredients 13

Oil, for frying
Three 6-ounce boneless, skinless catfish fillets
1 cup cornmeal
1 cup corn flour
1 tablespoon Cajun seasoning
2 large eggs
2 dashes hot sauce
Kosher salt and freshly ground black pepper
Spillway Sauce, recipe follows, for serving
1 cup mayonnaise
1/2 cup ketchup
1 tablespoon Cajun seasoning
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Fill a large Dutch oven fitted with a deep-frying thermometer halfway with oil and heat to 360 degrees F. Line a sheet tray with paper towels and fit with a wire rack.
  • Unwrap the catfish and place on a parchment-lined quarter sheet tray. Place in the freezer for 15 minutes to chill and firm up.
  • Meanwhile, whisk together the cornmeal, corn flour and Cajun seasoning in a pie plate or casserole dish. In a second pie plate, beat together the eggs, hot sauce, some salt and pepper and 1/2 cup water.
  • Remove the fish from the freezer and use a boning knife to very carefully cut each fillet into thin pieces. (You should be able to get 4 to 5 pieces from each fillet.)
  • In batches, dredge the fish through the egg mixture and then through the cornmeal mixture, then add to the hot oil, being careful not to overcrowd. Fry, turning as needed, until crisp and golden brown, 2 to 3 minutes. Remove to the prepared wire rack. Repeat with the remaining catfish.
  • Serve the catfish with the Spillway Sauce on the side.
  • Mix together the mayonnaise, ketchup, Cajun seasoning and Worcestershire in a small bowl.

1 tablespoon yellow mustard
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
2 teaspoons apple cider vinegar

TODD RICHARDS'S FRIED CATFISH WITH HOT SAUCE

Todd Richards's Fried Catfish With Hot Sauce image

The Atlanta chef Todd Richards says his mother made catfish on Fridays as part of her weekly rotation of dishes. She let the fish sit in cornmeal for about five minutes before frying, a technique that he said resulted in very crispy fish. He uses the same method in this recipe, adapted from his cookbook, "Soul: A Chef's Culinary Evolution in 150 Recipes" (Oxmoor House, 2018). If you're using boneless catfish, this dish can be served as a sandwich.

Tips:

  • Choose the right catfish: Use fresh or frozen catfish fillets that are firm and have a mild odor. Avoid fillets that are slimy or have a strong fishy smell.
  • Season the catfish well: Dredge the catfish fillets in a mixture of flour, cornmeal, salt, and pepper before frying. This will help to create a crispy crust and flavorful fish.
  • Cook the catfish over medium-high heat: This will help to prevent the fish from sticking to the pan and will also help to create a crispy crust.
  • Flip the catfish only once: Flipping the catfish too often will break the crust and make the fish more likely to fall apart.
  • Serve the catfish immediately: Catfish is best served hot and fresh out of the pan. You can serve it with a variety of sides, such as mashed potatoes, coleslaw, or green beans.

Conclusion:

Catfish is a delicious and versatile fish that can be cooked in a variety of ways. The recipes in this article provide a great starting point for cooking catfish, but you can also experiment with other seasonings and cooking methods to create your own unique dishes. Whether you're frying, baking, or grilling catfish, be sure to cook it until it is flaky and cooked through. Enjoy!
