A.G. Strickland of Marietta, Georgia dresses up canned baked beans in a jiffy...with green pepper, celery and canned tomatoes. With just a hint of sweetness and a touch of garlic, these beans are naturals for summer picnics and patio meals.

SAUCY BAKED BEANS
Basically traditional Boston baked beans, but uses bacon rather than salt pork, and orange peel and raisins add a zippy surprise. The preparation time doesn't include pre-soaking the beans overnight. I like to serve this with Boston Brown bread (see my recipe #90592), as is customary.

Steps:
- In a large bowl, cover the beans with water to 2 inches above the top of the beans; soak overnight and drain.
- Sautè the bacon with the onion until the bacon is crisp and the onion is tender.
- Add the bacon and onion and any pan juices to the beans.
- Combine the bean mixture with 10 cups water plus the maple sugar through the orange peel.
- Place in a 3½ quart or larger bean pot or casserole dish, or in two smaller pots.
- Simmer in preheated oven at 250° 5-6 hrs or until the beans are tender.
Tips:
- Choose the Right Beans: Select dried beans that are plump and free from blemishes. Soaking the beans overnight helps reduce cooking time and improves their texture.
- Enhance Flavor with Aromatics: Sautéing onions, garlic, and celery adds depth of flavor to the dish. Consider adding diced carrots, bell peppers, or mushrooms for extra veggie goodness.
- Use High-Quality Ketchup: Choose a ketchup that you enjoy the taste of, as it will significantly impact the overall flavor of the baked beans. Look for varieties with a rich tomato flavor and a hint of sweetness.
- Spice it Up: For a spicy kick, add a pinch of cayenne pepper or a dash of chili powder. Sriracha or chopped jalapeños also add a nice heat.
- Slow and Steady Cooking: Baking the beans low and slow allows the flavors to meld and develop. Avoid boiling the beans, as this can toughen them.
- Serve with Style: Garnish the baked beans with chopped fresh parsley or cilantro for a pop of color and freshness. Serve them alongside grilled meats, roasted vegetables, or a simple green salad.
