BEEF BRISKET WITH MOP SAUCE
This tender brisket roasts in a sauce that adds great flavor. When one of our sons lived in the South, I learned that "mop sauce" is traditionally prepared for Texas ranch-style barbecues in batches so large it is brushed on the meat with a mop! You won't need that much brisket sauce for my recipe, but will get the big-time taste. -Darlis Wilfer, West Bend, Wisconsin

Tips:
- Choose the Right Sauce: Consider the flavor profile of your corned beef brisket and select a sauce that complements it well. For a traditional Irish experience, opt for a classic Guinness sauce or a tangy horseradish sauce. If you prefer something sweeter, try a honey mustard sauce or a brown sugar glaze.
- Make it Homemade: Whenever possible, make your sauce from scratch using fresh ingredients. This allows you to control the flavors and adjust them to your liking. It's also more economical and rewarding than buying pre-made sauces.
- Balance the Flavors: Pay attention to the balance of flavors in your sauce. You want a sauce that enhances the taste of the corned beef brisket without overpowering it. Avoid sauces that are too salty, sweet, or sour.
- Consider the Occasion: Think about the occasion when choosing a sauce. For a formal dinner, a creamy horseradish sauce or a rich Guinness sauce might be appropriate. For a casual gathering, a simple honey mustard sauce or a tangy barbecue sauce could be more suitable.
- Experiment with Different Sauces: Don't be afraid to try different sauces with your corned beef brisket. There's no right or wrong answer, so have fun experimenting and finding new flavor combinations that you enjoy.
