HOT FUDGE SAUCE
This recipe for a classic hot fudge sauce came to The Times in 2004, from Kay Rentschler. "A well-constructed homemade hot fudge sauce moves forward with dark smoky accents and arrives with plenty of chew," she wrote. Here, bittersweet chocolate and high-fat Dutch process cocoa bring that smokiness, while heavy cream, butter and sugar mellow it out. It's a perfect contrast to the milky sweetness of a sundae loaded with vanilla ice cream and whipped cream.

Tips:
- Use a heavy-bottomed saucepan to prevent the fudge from burning.
- Do not stir the fudge too much, as this can cause it to become grainy.
- Use a candy thermometer to ensure that the fudge reaches the correct temperature.
- Let the fudge cool completely before cutting it into pieces.
- Store the fudge in an airtight container in a cool, dry place.
- For a richer fudge, use dark chocolate or semisweet chocolate instead of milk chocolate.
- To make the fudge even more decadent, add chopped nuts, dried fruit, or marshmallows.
- For a fun twist, try making different flavors of fudge, such as peanut butter fudge, mint fudge, or chocolate swirl fudge.
Conclusion:
Making fudge in a saucepan is a simple and easy process that can be enjoyed by people of all ages. With just a few ingredients and a little bit of time, you can create a delicious and decadent treat that is perfect for any occasion. Whether you are a beginner or an experienced baker, I encourage you to give this recipe a try. You won't be disappointed!
