CRANBERRIES AND CHICKEN SALAD

Cranberries and Chicken Salad image

This is my favorite salad ever. The blue cheese gives just a hint of the flavor that is brought out by the balsamic dressing. This salad is almost identical to the TGI Fridays pecan crusted salad, but the chicken is not rolled and breaded in pecans and bread crumbs and fried. It's a healthier version of it.

ORANGE, SPICED WALNUT AND DRIED CRANBERRY SALAD

Orange, Spiced Walnut and Dried Cranberry Salad image

Categories     Salad     Vegetarian     Wheat/Gluten-Free     Cranberry     Orange     Dried Fruit     Walnut     Winter     Bon Appétit

Yield Serves 8

Number Of Ingredients 12

6 tablespoons honey
1 1/2 tablespoons water
3/4 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon (generous) ground ginger
1 cup walnut halves and pieces
2 teaspoons sugar
3/4 cup water
3/4 cup cranberry juice cocktail
1/2 cup dried cranberries
8 oranges, peel and white pith removed, sliced into 1/2-inch-thick rounds, chilled
Fresh mint sprigs (optional)

Steps:

  • Preheat oven to 325°F. Line baking sheet with parchment paper. Mix first 5 ingredients in large bowl to blend. Add nuts; toss to coat well. Strain nuts, reserving liquid. Transfer nuts to baking sheet. Sprinkle nuts with sugar. Bake until golden brown, about 17 minutes. Cool completely.
  • Whisk 3/4 cup water, cranberry juice and reserved liquid from nuts in medium saucepan to blend. Stir in dried cranberries. Bring to boil. Reduce heat to medium-low and simmer until cranberries soften and liquid is reduced to thin syrup, about 20 minutes. (Can be made 3 days ahead. Store nuts airtight at room temperature. Cover and chill cranberry mixture.)
  • Arrange orange slices on platter. Spoon cranberry mixture over. Sprinkle nuts over. Garnish with mint, if desired.

Tips:

  • Select the freshest ingredients: Use ripe satsuma oranges, plump dried cranberries, and creamy blue cheese for the best results.
  • Make ahead: The salad can be assembled up to 2 hours in advance. Just keep it chilled until ready to serve.
  • Don't overdress the salad: A light drizzle of dressing is all you need to enhance the flavors of the ingredients.
  • Serve immediately: The salad is best enjoyed fresh, as the blue cheese can become overpowering if it sits for too long.

Conclusion:

The satsuma oranges, dried cranberries, and blue cheese salad is a delightful combination of sweet, tart, and savory flavors. It's a refreshing and healthy salad that's perfect for any occasion.

Here are some additional tips for making this salad:

  • If you don't have satsuma oranges, you can use other citrus fruits such as oranges, grapefruit, or tangerines.
  • Add a handful of chopped walnuts or pecans for a crunchy texture.
  • For a sweeter salad, drizzle with honey or maple syrup before serving.
  • Serve the salad over a bed of mixed greens or arugula for a more substantial meal.

Enjoy!
