Time 1h

Yield 8 servings

Number Of Ingredients 11

1/2 pound butter
1 pound onions about 3 medium, cut into 1/4-inch dice
1/2 cup all-purpose flour
4 28-ounce cans diced tomatoes
1 1/4 cups chicken broth
1/4 cup sugar
1 tablespoon kosher salt
1 teaspoon celery salt
3/4 teaspoon pepper
3/4 cup half-and-half
2 tablespoons honey

Steps:

  • In a large pot, melt the butter over medium-low heat. Add onions and cook gently, stirring occasionally, until soft and translucent, about 20 minutes.

Tips:

  • Use ripe, flavorful tomatoes. For the best tomato soup, start with fresh, ripe tomatoes. The sweeter the tomatoes, the better the soup will be.
  • Don't be afraid to use canned tomatoes. Not everyone has access to fresh tomatoes, especially during the off-season. Canned tomatoes can be a great substitute, just make sure to choose high-quality tomatoes packed in tomato juice, not water.
  • Roast the tomatoes before making the soup. Roasting the tomatoes concentrates their flavor and sweetness. This step is optional, but it makes a big difference in the final flavor of the soup.
  • Use a good quality broth. The broth is the base of the soup, so it's important to use a good quality broth. A homemade broth is ideal, but you can also use a store-bought broth. Just make sure to choose a broth that is low in sodium.
  • Season the soup to taste. Once the soup is cooked, taste it and season it to taste. You may need to add more salt, pepper, or herbs.

Conclusion:

Tomato soup is a delicious and comforting soup that is perfect for any occasion. It's easy to make and can be tailored to your own taste. With these tips, you can make the best tomato soup that you've ever tasted!
