1 pound white tiger shrimp
2 tablespoon butter (unsalted)
2 tablespoon olive oil
2 tablespoon sweet chili sauce
1 tablespoon Worcestershire
1 teaspoon chili powder
1 teaspoon liquid smoke
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 teaspoon sriracha hot sauce (or tabasco)
4 cloves garlic (minced)
juice from 1/2 lemon
salt and pepper to taste
2 tablespoon parsley (chopped)

Steps:

  • Peel and devein the shrimp.
  • Add the rest of the ingredients to oven safe skillet, stir and let simmer for 5 to 10 minutes.
  • Remove skillet from the heat and let cool for a couple minutes.
  • Add the shrimp and toss it around so that it's fully immersed in the sauce.
  • Cover with foil and refrigerate for at least 30 minutes to 4 hours.
  • Preheat oven to 400 degrees.
  • Bake shrimp for 10 to 15 minutes.
  • Serve immediately with crusty French bread and drizzle with additional lemon juice as needed.

SASSY SEASONED SHRIMP

I came up with this recipe for the Mixing Pot Challenge of the Zaar World Tour 6. I tried to represent my team "A Seasoned Sailor and his Sassy Sirens" in an Asian marinade that is great for shrimp. Its zesty and sweet, and has a bit of kick, just like our team. I used the marinade for grilled shrimp, I also tried it sauteed and liked the grilling method best. I recommend saving out about 1/4 cup of the marinade as a dipping sauce for the grilled shimp. We served it with fried rice as a side dish, but this would also make a wonderful appetizer! If you like it spicy, use 4 tablespoons of the chili garlic sauce. I used 3 and it was a little spicy but I could have gone hotter. You can also add some crushed red pepper to kick it up. Prep time includes marinating time.

2 garlic cloves, minced
1 teaspoon fresh ginger, minced
2 tablespoons rice wine vinegar
3 tablespoons chili-garlic sauce
1/4 cup green onion, sliced
1 tablespoon dark sesame oil
1/4 cup low sodium soy sauce
3/4 cup mango nectar
2 lbs shrimp, peeled and deveined

Steps:

  • Mix first eight ingredients in a bowl (or simply put all in a large ziploc and squish to mix). You can reserve 1/4 cup of the marinade as a dipping sauce.
  • Put the marinade in a large ziploc bag and add shrimp.
  • Marinate in the refrigerator at least 2 hours.
  • Take shrimp out of bag and thread onto skewers.
  • Grill over medium high heat for about 4 minutes each side, or until shrimp are done.
  • Serve with reserved marinade as a dipping sauce.

24 oz ( 35 - 45 ) count - large uncooked shrimp - peeled, deveined and rinsed - drain
2 Tbsp olive oil
4 Tbsp butter - divided
1 Tbsp each ~ garlic salt, garlic powder and paprika
1 heaping teaspoon italian seasoning
1/2 tsp each - black pepper, cayenne pepper and hot pepper flakes - or to your preference
2 Tbsp brown sugar
1 Tbsp dry sherry - optional
rice or pasta to serve over
lemon wedge & dried parsley - optional

Steps:

  • 1. In a small dish, mix the sugar, garlic powder, garlic salt, Italian seasoning, cayenne, red pepper flakes.
  • 2. In a large skillet over medium heat, melt 3 tablespoons of the butter with the oil. Add the spice mixture and stir making sure all is wet and mixed well with the oil and butter. Should be bubbling.
  • 3. Add the shrimp, spreading out so to cook evenly, stirring occasionally ( about 2 minutes after adding ) make sure other side is cooked as well, only until opaque.
  • 4. Stir in the remaining butter and sherry if using. Spoon hot shrimp and sauce over rice or pasta, with a squeeze of lemon if desired. My version is pretty spicy, you can cut down on the cayenne & pepper flakes to half if desired. My family likes hot.
  • 5. Enjoy! They're delicious!
