Categories     Salad

Yield 6 people

Number Of Ingredients 10

1/2 medium cabbage or bag of prepared slaw
2-3 carrots, shredded
2 small onions, shredded
1 small can crushed pineapple with juice
2/3 c sugar
1 c white vinegar
1 tsp salt and 1 tsp celery seed (or 1-1/2 tsp celery salt)
1/8 tsp pepper
2 tsp prepared mustard
3/4 c corn oil

Steps:

  • A day ahead of time, put cabbage, carrots, and onions in a roomy non-metal bowl and chill. Combine remaining ingredients in a saucepan and bring to a boil. Pour over vegetables, mix well. Let vegetables wilt for 20 minutes. Cover and refrigerate overnight. Drain before serving if you wish. This salad will keep in the refrigerator for 10 days.

Tips:

  • Saskatoon berries add a unique sweetness and tartness to coleslaw. If you can't find saskatoon berries, you can substitute another type of berry, such as blueberries or raspberries.
  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the coleslaw to be more tender and easier to eat.
  • If you don't have a food processor, you can grate the carrots and cabbage by hand. Just be sure to grate them finely, so that they blend well with the other ingredients.
  • The dressing for this coleslaw is made with mayonnaise, vinegar, sugar, and salt. You can adjust the amounts of these ingredients to suit your taste. If you like a sweeter coleslaw, add more sugar. If you like a tangier coleslaw, add more vinegar.
  • Coleslaw is a great make-ahead dish. You can make it up to 24 hours in advance and store it in the refrigerator. This makes it a great option for potlucks and parties.

Conclusion:

Saskatoon coleslaw is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. So next time you are looking for a new and exciting coleslaw recipe, give this one a try!
