FOIL BAKED ASPARAGUS
A very simple method of cooking asparagus, where they are wrapped in foil and baked, with nothing but a little butter and salt. So easy and yet so delicious!! My 2 1/2 year old daughter liked it too! I've only tried this once and I followed the recipe exactly as set out, but I'd like to try it again, perhaps putting a few sprigs of herbs in with it. You could also try herb butter instead of ordinary butter. You can omit the salt if you like. If you are making larger quantities you might need to make more than one "parcel". You could even wrap each portion separately and serve them in the foil wrappers - I ate mine straight out of the foil, and I think it made them even nicer as they're still steaming hot and in their cooking juices, and you can keep all that flavour and aroma trapped in the parcel until you're ready to eat it! Would make a really good starter served like this. Although I suppose it depends what kind of guests you've got - if they're used to silver platters they might not be so impressed with silver foil!! But I would be! :)

Steps:
- Preheat oven to 180 C (360 F).
- Prepare asparagus by snapping the lower "woody" part of the stem off (if it snaps cleanly you've got the right place; if it is difficult to break try higher up!), and peel the lower section if they're a bit old or thick.
- Tear off a large enough piece of aluminium foil to wrap around the bunch of asparagus securely, and place asparagus in foil.
- Dot with butter and sprinkle lightly with salt.
- Wrap securely, and then wrap an extra strip of foil around the tip end to protect it.
- Bake in oven for 25-35 mins, depending on the thickness and age of the asparagus (Mine were done in 30 and I'd say they were fairly average sized).
- Try to wait until you're ready to serve before you unwrap them, or better still, serve them still wrapped in the foil.

THE BEST ROASTED ASPARAGUS
The perfect roasted asparagus should be lightly browned and tender, yet bright green and crisp. Roasting the spears at a high temperature helps achieve this. We also browned grated Parmesan to make a nutty, crumbly frico topping. Wait until ready to serve to top the vegetables so the crisped cheese stays crunchy.

Steps:
- Preheat the oven to 450 degrees F. Line a baking sheet with a wire rack.
- Put the asparagus, olive oil, 1/2 teaspoon kosher salt and 1/4 teaspoon pepper in a medium bowl. Toss to coat evenly. Spread the asparagus in a single layer on the prepared baking sheet. Roast for 10 to 12 minutes, until lightly browned and tender, but still bright green.
- Meanwhile, spread the Parmesan evenly in the bottom of a medium nonstick skillet over medium heat. Cook undisturbed until the cheese melts, sticks together and turns golden brown, about 2 minutes, then flip with a rubber spatula and cook until golden on the second side, about 2 minutes more. Transfer the frico to a wire rack-lined baking sheet to cool completely, about 2 minutes. Break the frico into small crumbles and put in a small bowl. Add the lemon zest and 1/2 teaspoon black pepper and toss to combine.
- Transfer the roasted asparagus to a serving platter and squeeze the fresh lemon juice over the top. Top with the crumbled frico mixture.

Steps:
- Preheat the oven to 425 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper for easy cleanup. Snap off the woody ends of the asparagus (if you sharply bend the asparagus near the base, it will snap in the right place). Discard the ends.
- Place the asparagus on the sheet and drizzle with 1 to 2 teaspoons olive oil, just enough to lightly coat the asparagus. Sprinkle salt and pepper over the asparagus, and toss until the spears are lightly coated in oil. Arrange the spears in a single layer on the pan.
- Bake just until the base of the asparagus is easily pierced through by a fork. Very thin asparagus, like the kind shown here, will take as little as 9 to 12 minutes, whereas thicker asparagus will need 15 to 20 minutes.
- Transfer the roasted asparagus to a serving platter and season however you'd like. You could keep it simple with a squeeze of lemon juice, or a sprinkle of Parmesan, or add a pat of butter or drizzle of balsamic vinegar.
- Roasted asparagus is best served when it's fresh out of the oven, but it will keep at room temperature for up to 1 hour or up to 4 days in the refrigerator (gently reheat before serving).

Tips:
- Choose the right asparagus: Look for asparagus spears that are bright green, firm, and have tightly closed tips. Avoid spears that are wilted, limp, or have yellow or brown spots.
- Trim the asparagus: Cut off the woody ends of the asparagus spears. This is the bottom inch or two of the spear that is tough and fibrous. You can also snap off the ends by bending the spear until it breaks naturally.
- Season the asparagus: Drizzle the asparagus spears with olive oil and sprinkle with salt, pepper, and garlic powder. You can also add other seasonings, such as lemon zest, red pepper flakes, or grated Parmesan cheese.
- Wrap the asparagus in foil: Place the asparagus spears in the center of a large sheet of aluminum foil. Fold the foil up around the asparagus, making sure to seal the edges tightly. This will create a pouch that will help the asparagus to steam and cook evenly.
- Roast the asparagus: Place the foil pouch on a baking sheet and roast in a preheated oven at 425°F for 15-20 minutes, or until the asparagus is tender-crisp. You can check the asparagus by piercing it with a fork. It should be tender, but still have a slight crunch to it.
Conclusion:
Foil pouch oven-roasted asparagus is a simple and delicious side dish that can be enjoyed with a variety of main courses. It is a healthy and flavorful way to get your daily dose of vegetables. The asparagus spears are roasted to perfection, and the foil pouch helps to lock in the moisture and flavor. This recipe is also very easy to make, and it can be tailored to your own taste preferences. So next time you are looking for a quick and easy side dish, give foil pouch oven-roasted asparagus a try.
