Provided by Recipe from Edmonds Cookery Book

Number Of Ingredients 1

1/2 cup mixed chocolate chips

Steps:

  • Pre-heat the oven to 170C (338F) fan-forced and line two baking trays with baking paper.
  • In the bowl of an electric mixer, beat the butter, sugar, vanilla and condensed milk together until they are light and creamy.
  • Add the sifted flour and baking powder and beat until combined.
  • Add chocolate chips and beat until nicely distributed through the dough.
  • Take the bowl of the stand and roll tablespoons full of dough into balls.
  • Place the balls on the trays, leaving 3cm between each one and gently press the tops using a floured fork or your fingers.
  • Bake the biscuits for 20 minutes or until golden.
  • Leave them to rest on the trays for 10 minutes and then transfer to a wire rack to cool completely.

Tips:

  • Mise en Place: Before starting, measure and prepare all ingredients. This will ensure a smooth and efficient baking process.
  • Use Quality Ingredients: The quality of your ingredients will greatly impact the final product. Use fresh, real ingredients whenever possible.
  • Follow the Recipe Accurately: Baking is a science, and precise measurements and instructions are essential. Don't substitute ingredients or alter the recipe unless you're an experienced baker.
  • Pay Attention to Oven Temperature: Ovens can vary in accuracy, so it's important to use an oven thermometer to ensure the correct temperature. Underbaked or overbaked cookies can ruin a batch.
  • Chill the Dough: Chilling the dough before baking helps prevent spreading and results in a thicker, chewier cookie.
  • Don't Overmix: Overmixing the dough can result in tough cookies. Mix just until the ingredients are combined.
  • Use Parchment Paper: Lining the baking sheet with parchment paper prevents sticking and makes cleanup easier.
  • Bake in Batches: If your oven doesn't have even heat distribution, bake the cookies in batches, rotating the sheets halfway through, to ensure uniform baking.
  • Let Cookies Cool Completely: Before storing or enjoying, let the cookies cool completely on a wire rack. This allows them to firm up and develop their full flavor.
