I received this recipe from my daughter. This soup is so easy and flavorful. It improves the longer it sits and the flavors combine. It freezes really well, too. It is great with Mexican Cornbread, crackers, or Tostito chips and with whatever toppings you like. You can substiture or add kidney beans, if you desire.

Number Of Ingredients 12

2 lb ground beef (or ground turkey)
1 medium onion, chopped
1 can(s) Rotel tomatoes, do not drain
1 can(s) diced tomatoes, do not drain
1 can(s) black beans, drain and rinse well in colander
1 can(s) pinto beans, drain well
2 can(s) Shoepeg corn, drain (you can substitute a can of cream style corn)
2-3 c chicken or beef broth
1 pkg taco seasoning mix
1 pkg dry Ranch Dressing mix
minced garlic, about a teaspoon, or to taste
Shredded cheese, sour cream, sliced chilies, or whatever toppings you prefer

Steps:

  • 1. Saute meat, onion, and garlic, until meat is no longer pink and onion and garlic are translucent; drain well. Place in large stock pot. Add all other ingredients. Simmer 2 hours on stove top or in crockpot for several hours on low. Add more chicken broth, beef broth or water if needed. When ready to serve, top with shredded cheese, sour cream or favorite toppings. Serve with Tostito chips, crackers or Mexican cornbread.

2 lbs ground beef
1 large white onion
2 (1 ounce) packages dry ranch dressing mix
2 (1 1/4 ounce) packages taco seasoning
2 (14 ounce) cans black beans
2 (14 ounce) cans diced tomatoes
1 (10 ounce) can Rotel Tomatoes
2 (14 ounce) cans corn niblets

Steps:

  • brown beef with chopped onion and drain.
  • mix all ingredients (do not drain cans) together.
  • bring to a boil.
  • cover and simmer 30 minutes minimum.
  • top servings with sour cream and shredded cheddar if desired.
  • serve with tostida scoops.
  • This recipe can be cut in half by using one can of everything, one each of seasoning pkgs and half a can of rotel.

1 lb ground beef
1 (10 3/4 ounce) can condensed golden corn soup (or 1 can creamed corn)
1 tablespoon chili powder
1/2 teaspoon ground red pepper (cayenne)
1 (10 3/4 ounce) can condensed cheddar cheese soup or 1 (10 3/4 ounce) can nacho cheese soup
3/4 cup chopped green onion
3/4 cup chopped fresh tomato
1 (4 ounce) can chopped green chilies
1 1/2 dozen small corn tortillas
4 ounces monterey jack cheese, shredded (1 cup)
1/2 cup sliced black olives
avocado, sliced

Steps:

  • Heat oven to 350 degrees F. have an 11 x 7-inch baking dish ready.
  • Cook ground beef in a large non-stick skillet over medium-high heat, breaking up chunks, 4 minutes or until no longer pink. Drain off any fat. Stir in undiluted corn soup, chili powder and red pepper.
  • In a large bowl, stir cheese soup, onions, tomatoes and chilies until blended.
  • Cut tortillas in half. Line the bottom of baking dish with 8 halves. Cover with half the meat mixture. Top with 8 more tortilla halves, then with half the soup mixture. Repeat layers, ending with soup mixture.
  • Bake 20 minutes until tortillas are softened. top with shredded cheese and olives. Bake 10 minutes longer or until hot and bubbling.

1 (1 1/4 ounce) package taco seasoning
2 cups chicken broth
1/4 cup all-purpose flour
1 cup sour cream
1 (7 ounce) can chopped green chilies
1 (11 ounce) package tortilla chips
2 cups grated cheddar cheese
1/2 cup sliced green onion, including tops
2 cups picante sauce

Steps:

  • Brown ground beef in skillet, stirring untill no more pink remains.
  • Drain fat.

  • In small bowl wisk together flour and chicken broth.
