Provided by á-7198

Number Of Ingredients 12

2 teaspoons chili powder
1 teaspoon ground cumin
1 tablespoon vegetable oil
1 3/4 pounds boneless, skinless chicken breasts
1 teaspoon minced garlic
4 green onions, minced (about 1/2 cup)
1 can (10 3/4 ounces) Campbell's® Healthy Request® Condensed Tomato Soup
1/2 cup Pace® Picante Sauce
1/2 cup water
1 can (about 15 ounces) canned low sodium black beans, rinsed and drained
1 cup frozen whole kernel corn
2 tablespoons chopped fresh cilantro leaves

Steps:

  • 1 Stir the chili powder and cumin in a small bowl. Season the chicken with the chili powder mixture. 2 Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until browned on both sides. Add the garlic and onions and cook and stir for 1 minute. 3 Stir in the soup, picante sauce and water and heat to a boil. Reduce the heat to medium-low. Add the beans and corn. Cover and cook for 15 minutes or until the chicken is cooked through. Sprinkle with the cilantro

Tips:

  • Mise en place: Before you start cooking, make sure all your ingredients are prepped and measured. This will help you stay organized and avoid scrambling during the cooking process.
  • Use high-quality ingredients: The better the quality of your ingredients, the better your dish will taste. Choose fresh, organic produce and free-range, antibiotic-free chicken whenever possible.
  • Don't overcrowd the pan: When sautéing the chicken, make sure not to overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
  • Cook the chicken over medium-high heat: Medium-high heat will help to sear the chicken and give it a nice golden brown crust. Be sure to adjust the heat as needed to prevent the chicken from burning.
  • Use a variety of spices: Santa Fe chicken is typically made with a variety of spices, such as chili powder, cumin, oregano, and cayenne pepper. Feel free to experiment with different spice combinations to find one that you like.
  • Serve with your favorite sides: Santa Fe chicken can be served with a variety of sides, such as rice, beans, tortillas, or salad. Choose sides that will complement the flavors of the chicken.

Conclusion:

Santa Fe chicken is a delicious and easy-to-make dish that is perfect for any occasion. With its bold flavors and versatility, it's sure to please everyone at your table. So next time you're looking for a quick and flavorful meal, give Santa Fe chicken a try. You won't be disappointed!
