2 1/2 cups oyster crackers
3 tablespoons sugar
1/2 cup (1 stick) unsalted butter, melted
1 tablespoon freshly grated lemon zest
One 14-ounce can sweetened condensed milk
4 large egg yolks
1/2 cup fresh lemon juice
Fresh whipped cream, for serving
Freshly grated lemon zest, for serving

Steps:

  • For the crust: Preheat oven to 350 degrees F.
  • Add the crackers and sugar to a food processor and pulse a few times. Add the melted butter and lemon zest, then pulse until the crumbs look like wet sand, about 30 seconds. Let cool slightly.
  • For the filling: Add the condensed milk and egg yolks to a medium bowl and whisk until the yolks are incorporated. Add the lemon juice and whisk until fully combined, another 1 to 2 minutes. Pour into your prepared pie shell and bake until the filling has nearly set in the center, 20 to 25 minutes. Cool to room temperature, then chill in the refrigerator for at least 2 hours.

  • 1. PREHEAT OVEN TO 350 DEGREES
  • 2. CRUST: MIX MARGARINE, 1/2 C CHOPPED PECANS, FLOUR IN MED. SIZE BOWL. PRESS INTO A BAKING DISH AND BAKE AT 350 DEGREES UNTIL BROWN (AROUND 15-20 MINS) COOL COMPLETELY.
  • 3. FILLING: WITH MIXER, MIX CREAM CHEESE, COOL WHIP AND POWDERED SUGAR TOGETHER UNTIL CREAMY. PLACE THIS MIXTURE INTO THE COOLED CRUST AND SMOOTH THE TOP. • 4. TOP WITH COOL WHIP AND DUSTING OF CHOPPED PECANS. REFRIGERATE AT LEAST AN HOUR BEFORE SERVING. YOU CAN ALSO USE VANILLA INSTANT PUDDING INSTEAD OF THE BUTTER PECAN.

Tips:

  • Use a graham cracker crust that is at least 9 inches in diameter. This will ensure that the pie has a sturdy base and that there is enough room for the filling.
  • Make sure the butter is cold before you start making the crust. This will help to prevent the crust from becoming too crumbly.
  • Don't overmix the crust ingredients. Overmixing will make the crust tough.
  • Chill the crust for at least 30 minutes before baking. This will help to prevent the crust from shrinking.
  • Bake the crust until it is golden brown. This will ensure that the crust is cooked through.
  • Let the crust cool completely before adding the filling. This will help to prevent the filling from becoming runny.
  • Use a variety of fruits in your pie filling. This will give the pie a more complex flavor.
  • Don't add too much sugar to the pie filling. Too much sugar can make the pie too sweet.
  • Cook the pie filling until it is thick and bubbly. This will ensure that the filling is cooked through.
  • Let the pie cool completely before serving. This will allow the flavors to meld together.
