1¼ cups all-purpose flour, spooned into measuring cup and leveled-off
¼ cup natural unsweetened cocoa powder, such as Hershey's (see note)
1 teaspoon baking soda
1 teaspoon salt
1 stick (½ cup) unsalted butter, at room temperature
1 cup sugar
2 large eggs
1 cup mashed very ripe bananas, from 2-3 brown bananas
½ cup sour cream
1 teaspoon vanilla
½ cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 350° F. Grease a 9 x 5 x 3-inch loaf pan with non-stick cooking spray.
  • In a medium bowl, combine the flour, cocoa powder, baking soda and salt. Whisk until there are no more lumps in the cocoa powder and the mixture is well combined. Set aside.
  • In a large bowl or electric mixer fitted with the paddle attachment or beaters, beat the butter and sugar until light and fluffy, 2 to 3 minutes. We're adding a chocolate swirl to this traditional quick bread because . . . chocolate! Be sure to use overripe bananas, the darker the skin the better, to ensure maximum sweetness.

1/2 cup (112 g) unsalted butter, melted, plus more for the pan
1/2 cup (60 g) pecans
1 1/2 cups (180 g) all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
1 1/4 cups (280 g) smashed, overripe bananas
1 cup (200 g) sugar
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup (120 g) sour cream
3 1/2 ounces (100 g) semisweet chocolate, roughly chopped

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Butter the sides of a 9-by-5-inch (23-by-12.5-centimeter) loaf pan and set it aside.
  • Spread the pecans on a rimmed baking sheet lined with foil or parchment paper. Roast them in the oven for 10 minutes, until fragrant and lightly toasted. Allow the pecans to cool, then chop them and set them aside.
  • In a medium bowl, whisk together the flour, baking powder. cinnamon, nutmeg and salt until well combined.
