This is one of my greatest secret weapons for gatherings. It looks fantastic, you don't need to use an expensive brie for this, it's adaptable to your taste, it takes minutes to make, and it's an absolute and total crowd pleaser! The flavour combination is a killer: creamy brie with the warm nuttiness of pecans, sweetness from maple syrup and juicy pops of pomegranate. Normally brie served like this is baked, but you can't tell the difference between baking and microwaving!

1 (250 g / 8 oz) whole brie ((Note 1))
1/4 cup roughly chopped pecans (, roasted (Note 2))
1/4 cup pomegranate seeds
1/4 cup maple syrup

Steps:

  • Unwrap brie and place on a small microwave-proof plate with a rim (so maple syrup doesn't go everywhere).
  • Microwave on high for 1 minute 15 seconds, or until the brie is very soft when you prod the centre. Watch the brie as you microwave it - if it starts to puff up too much (i.e. risk of bursting), turn microwave off and leave brie inside - residual heat will continue to melt it.
  • Top with pecans, pomegranate seeds and maple syrup. Serve immediately with crackers of choice (choose ones suitable for scooping). I serve this with a spoon and/or small pate knife.

1 (8 ounce) package brie cheese (with rind)
1/4 cup sour cream
2 tablespoons packed brown sugar
2 tablespoons chopped pecans
2 teaspoons butter

Steps:

  • Heat oven to 350F degrees.
  • Spray a small ovenproof dish with nonstick cooking spray.
  • Place the Brie in this dish.
  • Spread sour cream over brie as though frosting a cake.
  • Sprinkle top with brown sugar, then with pecans.
  • Dot top with butter.
  • Bake until cheese is very soft to the touch, 15-18 minutes.
  • Increase heat to 425F and bake 5 minutes longer.
  • Brie will be starting to melt on the bottom and the sugar will be bubbling on the top.
  • Serve with bread, sliced apples and crackers.

Nonstick baking spray, for the foil
10 to 12 graham crackers
1 cup firmly packed dark brown sugar
3/4 cup (6 ounces) salted butter
2 tablespoons whipping cream
1 teaspoon vanilla extract
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Bake the pecans in a single layer in a shallow pan 10 to 12 minutes or until toasted and fragrant, stirring halfway through.
  • Line a 15-by-10-inch jelly-roll pan or a 9.5-by-13-inch casserole dish with aluminum foil; lightly grease the foil with baking spray. Arrange the graham crackers in a single layer in the prepared pan, slightly overlapping the edges.
  • Combine the sugar, butter and cream in a medium-size heavy saucepan; bring to a boil over medium heat and stir in the vanilla and pecans. Pour the butter mixture over the crackers, spreading to coat.
  • Bake for 10 to 11 minutes or until lightly browned and bubbly. Immediately sprinkle with the salt, lift the foil from the pan and slide the bark off the foil onto a wire rack. Cool completely, 30 minutes to an hour. Break into bite-size pieces.

This recipe was a suggestion from my Mother that she found but never tried. I altered it a little to fit my taste. I will publish the altered recipe. It was delicious and a perfect ending to a light dinner of fish and veggies. It left everyone full and satisfied, but not rolllling away from the table. You can make the caramel ahead and reheat right before serving.

13 ounces brie round
2 tablespoons butter
3/4 cup brown sugar
1/4 cup corn syrup
1 1/2 tablespoons flour
1/4 cup milk
coarsely chopped pecans, amount based on taste
2 red apples (Braeburn are a GREAT choice!)

Steps:

  • Preheat oven to 350.
  • Melt butter in saucepan over medium heat. Add brown sugar, corn syrup, and flour. Bring to a boil stirring constantly. Reduce heat and simmer for 5 minutes continuously stirring. Remove from heat. Once mixture is lukewarm, add milk and stir until smooth. (It will be lumpy at first- just keep stirring.) Add pecans - I used about a handful of halved pecans broken into fairly large pieces.
  • Place brie into oven until melted- only 5 minutes or so- you will know if you touch the outside and it moves with the melted cheese inside.
  • Take brie from oven and onto a serving platter. Warm caramel/pecan mixture if it has cooled, and pour over the top. Serve with sliced apples. Enjoy!
  • **NOTE: If you choose a slice of brie instead of a round, you should not bake the brie. It would melt all over the place. Just take out to room temperature, pour warm caramel sauce over it-- that should soften it enough to still be delicious.
