1 1/2 pounds small-medium, yellow, waxy potatoes, such as German Butterball, Yukon Gold or Carola
1/2 cup mascarpone
1 small bunch chives, chopped (about 1/4 cup)

Steps:

  • Preheat oven to 400 degrees. Spread half the salt in a medium baking dish. Place potatoes on top of salt, then bury completely with remaining salt. Bake potatoes until tender, 45-60 minutes. 1 cup kosher salt
1/2 cup (1 stick) unsalted butter, melted
2 tablespoons chopped fresh chives

  • Bring potatoes, salt and 6 cups water to a boil in a 4-quart saucepan over medium-high heat, stirring occasionally to ensure the salt has dissolved. Lower to a simmer, then cook until potatoes are tender, 18 to 20 minutes.
