Salt and Vinegar Potato Chips image

My children love salt and vinegar chips, and I had some potatoes to use, so I thought this would be a nice treat for them. I took my French fry recipe and converted it slightly, though the soaking in vinegar idea was my mom's! I hope your family likes them as much as mine did! These are excellent for a cookout; make them a day ahead and surprise everybody!

3 cups white vinegar
1 cup cold water

Time 1h

Yield 4

Number Of Ingredients 3

3 cups apple cider vinegar
1 pound red potatoes, thinly sliced on a mandoline
sea salt to taste

Steps:

  • Place vinegar in a large soup pot and bring to a boil. Add potatoes and boil for 5 minutes. Remove from heat, cover, and let sit for 30 minutes.
  • Line a baking sheet with paper towels. Drain potatoes but do not rinse. Arrange potato slices on the baking sheet, making sure none are overlapping. Cover the top of the potatoes with paper towels. Repeat layers until all potatoes have been dried.
  • Preheat an air fryer oven to 400 degrees F (200 degrees C) according to manufacturer's instructions. Place the basket rack in the top slot. This will act as a shield so that the fan does not blow the chips around once they start to fry.
  • Arrange potatoes slices on the remaining 3 racks and lightly sprinkle with salt. Place racks in the air fryer oven and cook for 10 minutes. Remove the top rack of chips and transfer chips to a plate. Set timer for 2 more minutes and then remove the next highest rack of chips. Set timer for 1 minute for the final rack of chips. Serve immediately.

SALT AND VINEGAR POTATO CHIPS

Avoid stirring or turning the potatoes as they bake on each side. Moving them around will cause them to stick, tearing the crispy surface from the chip.

SALT AND VINEGAR KETTLE POTATO CHIPS RECIPE - (4.7/5)

Salt and Vinegar Kettle Potato Chips Recipe - (4.7/5) image

Provided by MC042561

Number Of Ingredients 4

1 Yukon Gold or Russet Potato*
1/2 Cup of "Sub Oil Dressing" (Oil, Red Wine Vinegar and Italian Seasonings)
Sea Salt, to taste
Extra Red Wine Vinegar

Steps:

  • Preheat your oven to 375 degrees. Line a cooking tray with tin foil for easy clean up. Sprinkle a thin layer of sea salt on the tin foil. No need to coat with oil. Wash and peel your potato with a vegetable peeler. Be careful! This is a great way to lose skin on your fingers. Use the vegetable peeler to make very thin slices. Try to keep every slice the same width. Now take your potato slices and press between paper towels to absorb excess moisture. Put them in a medium mixing bowl and pour the Sub Oil mixture on them. Add additional red wine vinegar to the mixture, depending on your tastes. Let this mixture sit for 15-20 minutes for the best flavor. The potatoes may start to turn brown, but don't worry - they'll turn brown anyways after they cook! After 20 minutes, cover the baking sheet with a layer of the potato slices. Remember, you don't need to put additional oil on the tray, a thin layer of salt will suffice. Try not to let any of the slices touch, ensuring a thin layer. For every potato that you cook, you'll have to cook two batches. Now place the tray in your preheated oven and set the timer for 5 minutes. Depending upon the amount of oil used and the potato slice thickness, the cooking time may vary. Therefore, it is crucial that you watch the entire cooking process to ensure your chips don't burn. Once they turn a nice golden brown, they are down cooking! Carefully remove the tray and put the first batch of chips onto a plate lined with paper towels. Place another layer of paper towels on top to help absorb the grease.

Tips:

  • Choose the right potatoes. Russet potatoes are the best choice for making potato chips because they are starchy and have a high solids content, which makes them crispy.
  • Slice the potatoes thinly. The thinner the potato slices, the crispier the chips will be. Aim for slices that are about 1/8-inch thick.
  • Soak the potato slices in cold water for at least 30 minutes. This will help to remove the starch from the potatoes, which will make them less likely to stick together when frying.
  • Dry the potato slices thoroughly before frying. This will help to prevent them from splattering and sticking to the pan.
  • Use a high-quality oil for frying. Canola oil, vegetable oil, or peanut oil are all good choices.
  • Heat the oil to the correct temperature before frying the potato chips. The ideal temperature for frying potato chips is 350 degrees Fahrenheit.
  • Fry the potato chips in small batches. This will help to prevent them from sticking together and becoming soggy.
  • Drain the potato chips on paper towels after frying. This will help to remove excess oil.
  • Season the potato chips with salt and vinegar while they are still warm. This will help the seasoning to stick to the chips.
  • Let the potato chips cool completely before storing them. This will help to prevent them from becoming soggy.

Conclusion:

Making salt and vinegar potato chips at home is a fun and easy project that can be enjoyed by people of all ages. With a little practice, you can make potato chips that are just as good as, if not better than, the ones you buy at the store. So next time you're craving a salty and tangy snack, give this recipe a try!
