1 cup diced onion
3 cloves garlic, minced
3 cups shredded cooked chicken
1 ½ cups chunky salsa verde

½ cup fat free half-and-half
1 (3 ounce) package cream cheese, softened
2 cups shredded Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. Set aside.
  • Heat vegetable oil in a large skillet over medium-low heat. Add onion and cook for 2 to 3 minutes. Stir in garlic and continue cooking for 30 seconds. Add chicken and salsa verde; stir to warm through.

6 tablespoons vegetable oil, divided
12 (5- to 6-inch-diameter) corn tortillas
4 cups salsa verde , divided
2 cups shredded roasted chicken, divided
3/4 cup sour cream, stirred to loosen, divided
6 ounces grated Emmenthal, Muenster, or Mexican Chihuahua cheese (about 1 1/2 cups packed)
3 tablespoons chopped fresh cilantro
Pickled red onions
*Fresh green chiles; available at some supermarkets and at specialty foods stores and Latin markets.

Steps:

  • Char chiles directly over gas flame or in broiler until blackened all over. Enclose in paper bag; let stand 10 minutes. Peel and seed, then cut into 2x1/2-inch strips.
  • Preheat oven to 375°F. Heat 2 tablespoons oil in medium skillet over medium heat. Add 1 tortilla to skillet; cook until slightly softened, about 15 seconds per side, turning with tongs. Transfer tortilla to paper towels to drain. Repeat with remaining tortillas, adding oil to skillet as needed.

  • Preheat broiler. Line large rimmed baking sheet with foil; brush lightly with 1 tablespoon olive oil. Arrange tomatillos, poblano chiles, cut side down, and garlic cloves on prepared baking sheet. Broil until tomatillos and chiles begin to soften and blacken in several spots, watching closely to prevent burning, about 10 minutes (do not turn). Remove from oven.   • Heat 2 tablespoons oil in large nonstick skillet over medium-high heat. Add chopped red onion and sauté until slightly softened, about 2 minutes. Sprinkle shrimp with salt and pepper. Add shrimp, oregano, cumin, and remaining chopped chiles to skillet; sauté just until shrimp are almost opaque but not completely cooked through, tossing often, 3 to 31/2 minutes. Remove shrimp mixture from heat.
  • Preheat oven to 350°F. Brush 15x10x2- inch glass baking dish with remaining 1 tablespoon olive oil. Spread 1/2 cup salsa verde from processor in bottom of dish. Stack tortillas; wrap in damp paper towels and place on plate. Microwave tortillas on high just until soft and pliable, 1 to 11/2 minutes. The lime juice really helps to perk up the flavor of these mild enchiladas. If you want them to be spicier you can serve them with hot sauce or chopped jalapenos on the side. Or if you can find it, you can use the Herdez brand salsa verde hot instead of mild. The recipe originated from Good Housekeeping magazine, but I have made changes to suit my family.

3 cups cooked chicken, coarsely shredded
2 (16 ounce) jars salsa verde (such as Herdez brand)
1 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons lime juice (fresh)
1/4 cup cilantro leaf, chopped
16 corn tortillas
8 ounces sour cream (reduced-fat)
1/2 cup chicken broth
8 ounces monterey jack cheese, coarsely shredded
lime wedge (garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Place chicken in a medium bowl. Stir 1 cup salsa verde into chicken to evenly coat. Stir in garlic powder and salt/pepper to taste.
  • Grease a 13" by 9" glass or ceramic baking dish and set aside.
  • In 12-inch skillet, heat remaining salsa verde and lime juice to boiling on medium-high. Boil 2 minutes, stirring occasionally. Stir in 2 tablespoons cilantro; keep warm over very low heat.

2 pounds halibut fillets
1 cup plus 2 tablespoons vegetable oil
Salt and freshly ground black pepper
1 tablespoon unsalted butter
1/2 cup chopped onion
3/4 cup mayonnaise
3/4 cup sour cream
1 (4-ounce) can diced green chiles
2 cups store-bought shredded Mexican cheese mix (8 ounces)
4 cups store-bought salsa verde, or homemade Salsa Verde (page 198)
10 8-inch corn tortillas

Steps:

  • Preheat the oven to 350°F.
  • Lightly coat the halibut with 2 tablespoons of the vegetable oil and season it with salt and pepper. Put the halibut in a 9 x 13-inch casserole dish and bake for 25 minutes. Allow the halibut to cool, then flake it into a bowl. Keep the oven at 350°F.
  • Melt the butter in a sauté pan set over medium heat. Add the onion and cook until translucent, about 8 minutes. Transfer the onion to a medium bowl and add the mayonnaise, sour cream, chiles, and 1 cup of the cheese mix. Mix thoroughly.
  • Pour 2 cups of the verde sauce into the bottom of a 9 x 13-inch casserole dish. Set aside.
  • Heat the remaining 1 cup of vegetable oil in a sauté pan set over medium heat until just warm, then turn off the heat. Put one tortilla in the oil at a time and leave it in the oil for 5 seconds (you are looking to just make the tortilla pliable, not brown or crunchy). Transfer the tortilla to a cutting board. Put 1/4 cup of the fish mixture on one end of the tortilla. Roll up the tortilla and put it on top of the sauce in the casserole dish, seam side down. Repeat until all ten tortillas are filled, then pour the remaining 2 cups verde sauce over the top to coat the enchiladas entirely. Sprinkle the remaining 1 cup cheese mix over the top.

1 tablespoon vegetable oil, plus 2 teaspoons more for dressing the salad
12 corn tortillas, toasted, stacked, and wrapped in a clean kitchen towel to steam
4 cups shredded chicken (from a 3-pound poached chicken)
7 ounces queso fresco, crumbled, or shredded Monterey Jack cheese
3 to 4 cups shredded romaine lettuce, washed and dried
6 radishes, trimmed and sliced
1 teaspoon white vinegar
Coarse salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees.
  • Heat a saucepan to medium high and add a tablespoon of oil. Carefully pour in the green sauce and cook, stirring constantly to thicken up, about 3 minutes. One by one dip the tortillas in the sauce, place in an ungreased 9 x 13-inch baking dish, fill with some chicken, and roll up. Fit each enchilada snugly next to the other in the baking dish. Lightness is not an attribute usually associated with enchiladas, the most comforting of Mexican tortilla foods. But these enchiladas, filled with a mix of blanched seasoned chard and succulent diced chayote and covered with a classic cooked tomatillo salsa, are both light and incredibly satisfying.

1 pound Swiss or rainbow chard, or a combination
2 medium-size chayote or summer squash (about 1 1/4 pounds), cut in small dice (4 cups diced)
1 pound fresh tomatillos, husked and rinsed
2 jalapeño or 2 to 3 serrano chiles, stemmed
1/2 white onion, coarsely chopped
Salt to taste
4 large peeled garlic cloves; 2 whole and 2 minced
12 cilantro sprigs, plus chopped cilantro for garnish
1 tablespoon canola or grapeseed oil, plus 1/3 cup for frying
2 1/2 cups chicken or vegetable stock
2 tablespoons extra-virgin olive oil
1 teaspoon Mexican oregano
Black pepper
18 corn tortillas
About 1/2 cup crumbled queso fresco or feta

Steps:

  • Strip chard leaves from stems and wash in 2 changes of water. Rinse stems and cut in small dice if wide, or, if thin, slice crosswise 1/4 inch thick. Set aside stems with chayote in one bowl and leaves in another.
  • Make the salsa verde: Combine tomatillos, jalapeños and onion in a medium saucepan; cover with water and bring to a boil. Reduce heat and simmer 10 minutes, until tomatillos have gone from pale green to olive and have softened. Using a slotted spoon, transfer tomatillos, onion and one of the jalapeños to a blender. Do not drain water from pot. Let vegetables cool in blender while you blanch greens and chayote.
  • Add more water to the pot so it is about 2/3 full. Return to a boil, salt generously, and add leaves. Blanch until tender, 1 to 2 minutes. Transfer leaves to a bowl of cold water to quickly shock, then drain and dry. Chop coarsely and set aside.
  • Return water to a simmer and add chayote and chard stems. Simmer 5 minutes, or until just tender. Drain through a colander and again on paper towels.
  • Add whole garlic cloves and cilantro sprigs to ingredients in blender and blend until smooth. Taste for heat and add remaining jalapeño if desired.
  • Heat 1 tablespoon canola oil in a large, heavy saucepan over medium-high heat. When hot, add tomatillo purée and partly cover to protect from splattering. Cook, stirring often, until it thickens and begins to stick to the pan, about 5 minutes.
  • Stir in stock, add salt to taste, and bring to a simmer. Cook uncovered for 20 minutes, stirring often, until sauce is thick and coats the front and back of a spoon. Taste and adjust seasoning.
  • Heat olive oil in medium skillet over medium heat and add minced garlic. When fragrant, after about 30 seconds, stir in oregano, blanched leaves, stems and chayote. Cook, stirring for about 3 minutes, until tender, fragrant and coated with oil. Season with salt and pepper. Stir in 1 cup salsa verde and set aside.
  • Prepare the tortillas: Heat 1/3 cup canola oil in a medium skillet over medium heat, until oil bubbles around the edges of a tortilla when you dip it into the pan. Place a platter covered with paper towels next to pan. Using tongs, slide tortillas, one at a time, into hot oil. As soon as tortilla begins to puff, about 10 to 15 seconds, flip over and leave another 10 to 15 seconds. Immediately remove from pan and drain on paper towels. Cover with foil to keep warm.
  • One by one, quickly dip tortillas into the remaining warm salsa verde, lay on serving platter, and top with about 1/4 cup filling. Roll up tortilla and place seam side down on platter. When all tortillas have been filled, pour remaining salsa verde on top, sprinkle with cilantro and queso fresco and serve.

1 tablespoon chopped fresh oregano leaves (optional)

Steps:

  • Wrap tortillas in aluminum foil, and heat in oven at 275F until fillings and sauce are ready.
  • Black Bean Filling:
  • Heat 1 tablespoon of olive oil in large skillet, and add 1 clove of chopped garlic. Grate 1 onion into pan with a hand grater. Add half of the jalapeno. Cook for 1 to 2 minutes.
  • Add beans, and mash with back of a fork. Stir in 1 teaspoon cumin and tomato paste, and season with salt.
  • Warm Salsa Verde:
  • Place tomatillos in a food processor, and pulse to a coarsely ground paste.
  • Heat remaining 1 clove of garlic in remaining 1 tablespoon of olive oil over medium heat in a large saucepan. When garlic begins to sizzle, grate 1 onion with a hand grater directly into pan. Add remaining jalapeno. Heat through for 1 to 2 minutes, and add ground tomatillos. Simmer for 5 minutes. Add vegetable stock, 1 teaspoon cumin and salt to taste.
  • Scoop avocado flesh out of skins and into pot. Mash with back of a fork. Return sauce to a gentle boil. Reduce heat to low until enchiladas are assembled.
  • Preheat broiler. Scoop some sauce onto bottom of a casserole dish or shallow serving platter.
  • To make an enchilada, place 1 to 2 scoops of filling down center of a tortilla, and roll. Place filled tortillas seam side down into sauce on platter or casserole. Line up tortillas, one next to another, and top with remaining sauce and grated cheeses. Melt cheeses sprinkled with oregano under broiler, and serve immediately.

1 c onion, chopped
1 Tbsp olive oil
3 garlic cloves, chopped
1 tsp dried oregano
2 can(s) 15-oz. cans black beans, rinsed and drained
1 chipotle chili in adobo sauce
1 Tbsp adobo sauce (from canned chipotle chilies in adobo sauce)
1/2 tsp kosher salt
1/4 c chicken broth
1/2 c monterey jack cheese, shredded
8 6" yellow corn tortillas
2 Tbsp olive oil
2 c salsa verde (see recipe below)
1/2 c queso fresco cheese, crumbled (can sub feta cheese, if needed)
SALSA VERDE
1 lb tomatillos, husked and halved
2 poblano chilies, seeded and halved
1/2 c onion, chopped
1 Tbsp vegetable oil
3 garlic cloves, minced
1/2 c fresh cilantro leaves
1/2 c flat-leaf parsley leaves
1 Tbsp fresh lime juice
1 tsp kosher salt
1/2 c chicken broth

Steps:

  • 1. Preheat oven to 400 degrees. In a large nonstick skillet, saute onion in oil over medium-high heat for 3 minutes. Add garlic and oregano and continue to cook 1 minute.
  • 2. Puree half of the black beans, the chipotle chili, adobo sauce and salt in a food processor. Combine onion mixture, remaining whole beans, broth and shredded cheese with the bean puree.
  • 3. To make Salsa Verde: Broil tomatillos and chilies in oven. Saute onion in oil over medium-high heat for 3 minutes. Add garlic and saute 1 minute. Remove membrane from poblano peppers. Place tomatillos, chilies, onion and garlic in a food processor; pulse until chopped. Add herbs, lime juice and salt. Gradually add broth; process until smooth.
  • 4. Fry corn tortillas in a little oil to soften and seal them. Make sure oil is hot enough so they don't get saturated with oil.
  • 5. Dip corn tortillas in sauce one at a time while filling them with a generous 1/2 cup of bean mixture and then roll up. Continue until all 8 enchiladas are completed. Place a small amount of salsa verde to just barely cover the baking dish and line each enchilada side by side (seam side down). Top with 1 cup salsa verde and crumbled queso fresco. Bake enchiladas for 10 minutes.

Don't let the one-hour prep time on these enchiladas scare you. Use some leftover roast chicken, or buy a roast chicken at the market on the way home, and you'll save at least 20 minutes, making the dish a terrific weeknight feed, alongside a green salad. (At El Real Tex-Mex restaurant, in Houston, the great Tex-Mex scholar and restaurateur Robb Walsh serves his version with lightly smoked chicken, which if you can find or make is superb.) The salsa verde is dead simple to make and the rest is assembly - a task that grows markedly easier each time you do it.

2 pounds bone-in chicken thighs or breasts, or a mixture
1 small white onion, cut in half
4 cloves of garlic
1 tablespoon kosher salt
1 pound fresh tomatillos, husked, rinsed and cut into quarters (use canned if you can't find fresh)
1 small white onion, peeled and chopped
1 clove of garlic, peeled and chopped
2 serrano chiles or more to taste, seeds removed if you want it less spicy, stemmed and roughly chopped
4 to 5 tender stems of fresh cilantro, with leaves, roughly chopped
Salt to taste
1/2 cup neutral oil, like canola
12 yellow corn tortillas
1 cup crumbled queso fresco or cotija cheese
1 cup Mexican crema, or use crème fraîche or sour cream
1 medium-size white onion, peeled and chopped (optional)

Steps:

  • Prepare the chicken: Place chicken parts in a large saucepan with onion, garlic and salt, and cover with water. Heat pan over high heat until liquid comes to a boil, then reduce heat to medium and let simmer until chicken is cooked through, about 20 to 25 minutes. Remove chicken and let cool, reserving stock for another use. Using your fingers or two forks, shred meat from chicken and reserve, discarding skin and bones. (Alternatively, shred meat from leftover or store-bought roast chicken and set aside.)
  • Meanwhile, heat oven to 375, and make the salsa verde: Combine tomatillos, onion, garlic, serranos and cilantro in a blender or food processor and purée until smooth, adding water as needed to thin it out a little. Season with salt to taste.
  • Prepare the tortillas: In medium sauté pan set over medium-high heat, heat oil until it begins to shimmer. Using tongs or a wide spatula, place a tortilla in the hot fat; it should start to bubble immediately. Heat tortilla for about 10 seconds a side, until soft and lightly browned. Remove tortilla and set on a rack set over a baking pan, or just on a baking pan if you don't have a rack. Repeat with remaining tortillas, working quickly.
  • Assemble the enchiladas: Use a ladle to put about 1/2 cup salsa verde in the bottom of a 9-by-13-inch baking pan and spread it out a little. Roll a few tablespoons of shredded chicken into each tortilla with a teaspoon or so of salsa verde and place it seam-side down in the pan, nestling each one against the last. Ladle salsa verde over top of rolled tortillas and sprinkle with about half the crumbled cheese.
  • Transfer to oven and bake until sauce bubbles and cheese is melted, about 15 minutes. Dot with crema, sprinkle with remaining cheese and, if using, chopped onion, then serve immediately.

2 cups Chicken Broth
1 tablespoon Whole Black Peppercorn
5 Garlic Cloves, crushed
1 Celery Stalk / coarsely chopped
2 Chicken Breasts or Thighs
1 Carrot / Large peeled and cut into 1/2" pieces
1 Jalapeno Pepper / Cut in Half and Seeded
1/2 Onion / Cut into wedges
7 ounces Salsa Verde
1/4 cup Heavy Whipping Cream
1 cup Tomato / Chopped and Seeded
1/4 cup Cilantro / Fresh, Chopped
1/4 teaspoon Kosher Salt
1/2 teaspoon Cumin, ground
1/4 teaspoon Red Pepper, ground
4 ounces Cream Cheese / softened
12 Corn Tortillas and/or Flour Tortillas / 6"
1/4 cup Cheddar Cheese, sharp & shredded

Steps:

  • Combine first 9 ingredients in a saucepan over medium heat; bring to a simmer. Cook 8 minutes or until chicken is done. Remove chicken from pan with a slotted spoon; let stand 10 minutes. Coarsely chop; set aside. Drain cooking liquid through a sieve over a bowl; reserve liquid. Discard solids.
  • Combine the reserved cooking liquid and salsa verde in a wide saucepan; bring to a boil over medium-high heat. Cook until reduced to 1-1/2 cups (about 30 minutes). Reduce heat to low; stir in whipping cream. Place pan over low heat.
  • Preheat oven to 400 degrees.
  • Place chicken in a medium bowl. Add tomato and next five ingredients (through cream cheese) to chicken; toss. Dip each tortilla in sauce mixture for a few seconds. Fill each tortilla with about 1/3 cup chicken mixture; roll up. Arrange filled tortillas, seam sides down, in an 11" x 7" glass or ceramic baking dish coated with cooking spray. Spoon sauce over tortillas; top with cheddar cheese. Bake at 400 degrees for 20 minutes or until lightly browned.

5 large chicken breasts
salt and ground black pepper to taste
water
5 fresh tomatillos, husks removed
1 serrano pepper, or more to taste
2 cloves garlic
3 poblano peppers
1 tablespoon vegetable oil
1 onion, chopped
1 cup chopped fresh cilantro
1 lime, juiced
½ cup vegetable oil
12 corn tortillas
2 (8 ounce) packages shredded queso quesadilla (white Mexican cheese)
4 tablespoons Mexican crema

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Fill a large pot 3/4 full with water and bring to a boil. Add chicken and season with salt and black pepper. Cook until chicken is no longer pink inside, about 15 minutes.
  • Meanwhile, bring 1 cup water to a boil in a medium-sized pot. Add tomatillos, serrano pepper, and garlic. Boil for 12 minutes.
  • Heat a cast iron skillet over medium heat. Place poblano peppers in a resealable plastic bag and add 1 tablespoon oil. Toss to coat. Transfer peppers to the hot skillet and roast until dark brown on all sides, about 5 minutes. Return roasted peppers to the resealable bag and seal. Set aside to steam for 10 minutes. Take out peppers from the bag; remove and discard skins and stems.
  • Use a slotted spoon to transfer tomatillos, serrano peppers, garlic, and 1/2 cup of the cooking liquid to a blender. Add onion, cilantro, lime juice, roasted poblano peppers, salt, and pepper to the blender. Liquefy into a smooth sauce.
  • Remove chicken from the water in the pot and shred using a fork.
  • Heat 1/2 cup oil in a skillet over medium heat. Fry tortillas in the hot oil until softened, about 5 seconds on each side. Transfer to a plate lined with paper towels to absorb excess oil.
  • Pour 1/2 the sauce from the blender into the bottom of a long glass baking pan. Roll a portion of chicken mixture and some shredded queso cheese on a tortilla, roll up, and place in the pan. Repeat with remaining tortillas, chicken mixture, and queso cheese. Cover enchiladas with remaining sauce. Use a spoon to add crema in a zigzag design on top. Top everything with remaining queso cheese.
  • Bake in the preheated oven until cheese starts to brown, about 20 minutes.
