VEGETABLE SALSA SOUP

Vegetable Salsa Soup image

This is a quick, tasty, low-fat vegetable soup. I usually make a big pot, and freeze half of it. Try it with zucchini, turnips, rutabagas or green beans. Sometimes I boil chicken breasts in the broth as I prepare the vegetables, then dice them and put them back in the broth with the salsa and vegetables.

SALSA VEGETABLE SOUP

My mom makes a beef veggie stew that is similar to this, but I wanted something healthy, low sodium, and full of veggies! It is a great soup to eat on a cold winter night. I serve it by itself, but it would also be great with a side of French bread to dip in the broth!

Tips:

  • Prep Vegetables in Advance: Save time during cooking by chopping and dicing vegetables beforehand. This allows you to focus on the cooking process rather than prep work.
  • Use Canned or Frozen Vegetables: If fresh vegetables are unavailable or out of season, canned or frozen options provide a convenient alternative while still retaining essential nutrients.
  • Add Herbs and Spices: Elevate the flavor of your soup with a blend of herbs and spices. Garlic, onion, oregano, basil, thyme, and paprika are popular choices.
  • Use a Variety of Vegetables: Don't limit yourself to a few types of vegetables. Experiment with different combinations to create a vibrant and flavorful soup.
  • Simmer for Maximum Flavor: Allow the soup to simmer gently for at least 30 minutes to allow the flavors to meld and develop.
  • Serve with Toppings: Enhance the soup's presentation and taste by offering a variety of toppings such as grated cheese, sour cream, croutons, or chopped herbs.

Salsa vegetable soup is a versatile and delicious dish that offers a hearty and nutritious meal. With its vibrant colors and bold flavors, it's a crowd-pleaser that can be enjoyed for lunch, dinner, or as a comforting snack.
