2 slices day-old white bread
2 eggs, lightly beaten
1 cup salsa
1/2 cup crushed tortilla chips
1/2 cup each chopped green pepper, onion and celery
1 jalapeno pepper, seeded and chopped
6 garlic cloves, minced
1 teaspoon pepper
1/2 teaspoon Italian seasoning
1/4 teaspoon seasoned salt
1 pound ground beef

2 lbs lean ground turkey
1 cup seasoned dry bread crumb
1 1/2 cups water
1 cup salsa (mild, medium or spicy, according to taste)
1 onion, chopped
3 garlic cloves, chopped
1 egg

Steps:

  • Preheat oven to 425.
  • in a small bowl, mix the bread crumbs, water and salsa and set aside for 10 minutes.
  • in a large bowl, add onions, garlic, turkey, egg and when it's ready, the water/breadcrumb mixture.
  • using your clean hands, mix together.
  • shape into a loaf shape in a large pan. I usually use a 9x13x2.
  • Bake for 60 minutes or until cooked through. Remove from oven and allow to cool slightly before slicing.

1 cup oatmeal
1 onion, grated
1 cup zucchini, grated
3/4 cup carrot, grated
4 garlic cloves, finely chopped
1 teaspoon Worcestershire sauce

  • In a bol, whisk lightly egg whites. Add oatmeal, onion, zucchini, carrots, garlic, Worcestershire sauce, salt, thyme and pepper. Stir. Add ground beef and stir.

1 small onion, diced
1 tablespoon Worcestershire sauce
1/2 package dry onion soup mix
1 egg
1 teaspoon garlic
1/2 teaspoon pepper
3/4 cup salsa
3/4 cup salsa
1 teaspoon brown sugar
1 teaspoon chili powder
2 tablespoons ketchup

Steps:

  • Mix ingredients for loaf together and place in a loaf pan.

1 egg, lightly beaten
1/4 cup fresh cilantro (optional) or 1/4 cup parsley, chopped (optional)
1 sweet green pepper, chopped (optional)
1 stalk celery, chopped (optional)

1 cup corn (optional)
