SALSA DI PARMIGIANO (PARMESAN DIP)
This recipe is courtesy of Michael Chiarello on the Food Network. This is simple to make and yummy to eat. It's great on crostini and bruschetta and I'm sure on or in many other foods! Note: this dip is a little oily and when it sits, has oil that settles on the top--it's supposed to do that.

- Freshly grated Parmesan cheese is best. Pre-grated Parmesan cheese can be used, but it doesn't have as much flavor.
- Use a food processor or blender to make the dip smooth and creamy.
- If you don't have a food processor or blender, you can mash the ingredients together with a fork.
- Taste the dip and adjust the seasonings as needed. You may want to add more salt, pepper, or garlic powder.
- Serve the dip immediately or chill it for later.
- Serve the dip with your favorite crackers, vegetables, or bread.
