1 boneless beef chuck roast (2 to 2-1/2 pounds), cut into 3/4-inch cubes
2 tablespoons canola oil
1 jar (16 ounces) chunky salsa
1 can (8 ounces) tomato sauce
2 garlic cloves, minced
2 tablespoons brown sugar
1 tablespoon soy sauce
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
Hot cooked rice

Steps:

  • In a large skillet, brown beef in oil; drain. Add salsa, tomato sauce, garlic, brown sugar and soy sauce; bring to a boil. , Reduce heat; cover and simmer for 2 hours or until meat is tender. Stir in cilantro and lime juice; heat through. Serve over rice.

1 can (15 oz) Progresso™ dark red kidney beans, undrained
1 can (7 oz) whole kernel corn, undrained
1 can (8 oz) tomato sauce
2 teaspoons chili powder
1 1/2 cups Original Bisquick™ mix
1/2 cup milk
1/2 cup shredded Colby-Monterey Jack cheese (2 oz), if desired

Steps:

  • In 12-inch skillet, cook beef over medium heat, stirring occasionally, until brown; drain. Stir in salsa, beans, corn, tomato sauce and 1 teaspoon of the chili powder. Heat to boiling; reduce heat to low.
