BLACK BEAN, CORN, AND SALSA DIP--WEIGHT WATCHERS

Black Bean, Corn, and Salsa Dip--Weight Watchers image

I got this from my daughter. She had it with the baked Tostito Scoops. It was delicious. You can eat a whole cup and 15 scoops for 4 points, and one cup is a lot. Do you ever go to a gathering and there is nothing for you to eat if you are on Weight Watchers? Well now you can and you will enjoy it. It can also be used for a condiment. NOTE: I tried and tried to put in the Tostito Scoops in the ingredients and it wouldn't allow me, but you will need these for a dip.

BEAN SALSA DIP

BEAN SALSA DIP image

Categories     Bean     Appetizer

Number Of Ingredients 8

1 15-ounce can kidney beans (no salt), drained
4 plum tomatoes, chopped
4 scallions, chopped
1/2 red pepper, chopped
1/4 cup canned tomato paste, no salt
4 tablespoons raw almond butter
2 tablespoons rice vinegar
1/2 teaspoon each dried parsley, oregano and chili powder, or to taste (optional)

Steps:

  • Place all ingredients in a bowl and mix together with a fork. This makes a great salsa for baked pita chips.

Tips:

  • Choose the right beans: Pick beans that are firm and not too mushy. You can use canned or dried beans. If using dried beans, soak them overnight before cooking.
  • Use fresh ingredients: Fresh salsa, cilantro, and lime juice will give your dip the best flavor. If you can't find fresh salsa, you can use a store-bought variety.
  • Don't overcook the beans: Overcooked beans will be mushy and bland. Cook them just until they are tender.
  • Season to taste: Add salt, pepper, and cumin to taste. You can also add a pinch of cayenne pepper for a little heat.
  • Serve with your favorite dippers: Chips, crackers, or vegetables are all great options for dipping.

Conclusion:

Salsa bean dip is a delicious and easy-to-make appetizer or snack. It's perfect for parties, potlucks, or just a casual get-together. With just a few simple ingredients, you can create a flavorful dip that everyone will enjoy. So next time you're looking for a quick and easy recipe, give salsa bean dip a try. You won't be disappointed!
